Starting point is 00:01:13 So nice to be with you again. Oh, this is going to be a good show. I'm so happy you're here. We've got Gabriel Iglesias on the program and the very talented Matt Walsh. This is very exciting. I hope. hope you're doing well. I hope that you are enjoying yourself as we dig out of the quagmire
Starting point is 00:01:33 and make our way back to normality where we can get out and do all the things we used to do. But I have to say, I'm pretty excited because not only am I hopeful where things are going, but I also seem, it's almost like I'm cooking more because it feels like I know that the is near. Not the end of times, but the end of the time that we're going to be able to spend in our kitchens forever. Am I wrong? Am I wrong to be thinking that soon we're just going to be going out and never be in our kitchens again? I don't think I'm wrong. Thank you for subscribing. I just wanted to send it to my daughter at school and it was like a hundred bucks to ship one loaf of sourdough bread. Last night, just before we get to the big
Starting point is 00:04:33 interviews, last night, I made a big pasta Sunday dinner. I was in the kitchen for hours. It was delightful. I had wine and I was a pretty simple sauce and from scratch. And then some regitone delightful garlic bread delightful and then dove into fried zucchini ooh i took the dutch oven put some oil in it a good amount of oil it's kind of shocking how much oil you have to use for this kind of stuff and then just took the zucchini which i didn't know actually you've got to really clean these buggers uh the soil can get through their thin skin pretty easily so it's got a soak it for a good 20 minutes in water and then give it good scrubbing and get all the crud out of it. Slice into sticks, about a quarter inch sticks.
Starting point is 00:05:26 And the frying of it, it was literally just flour water. You just take this flour, sift it into a cup of water and keep stirring it, about two-thirds of a cup and just put it in gradually and it turns into like almost a sour cream kind of a consistency. Dip the zucchini in that. put it into the friar. Ooh, holy Toledo. A little lemon, a little salt.
Starting point is 00:05:54 Showstopper. Showstopper on the Sunday night here at the Papa household. I recommend it. I recommend it's kind of fun to fry big stuff. Made me think I should go get a chicken and throw that in there. I don't really fry that much because I had a couple accidents. Nothing life-threatening, but thank God it was wearing glasses. A lot of out of control. Too shallow of a pan, too much oil, too hot, throwing stuff
Starting point is 00:06:28 in, kerbluy. But if you have a Dutch oven, a nice big thing, you can put it in there and be protected and kind, and yeah, it makes me want to throw a chicken in there. I hope you're doing well. I hope you're cooking as well. Today we have the great Gabriel Iglesias, aka Fluffy. Gabriel is such a nice guy, lover of food, and we have a great conversation. He is massive, massive, popular stand-up comedian. He has over like 23 million fans on social media. He sells out arenas. Tours around like a rock star and tour buses.
Starting point is 00:07:12 And it is well-deserved. He's just one of those guys that is totally unique. So fun, just his own thing and just joyful. He's just one of those joyful comedians where you just kind of go and escape and just have a good time. He is really memorable. You can see him on Netflix. He has his own show called Mystery Glacius.
Starting point is 00:07:35 I don't think they really do it like his seasons. There's a whole bunch on there. Just go to Netflix. You don't need to know if it's... I think it's probably the amount of three seasons. but it's his sitcom, like a multi-camera sitcom. And there's some other comedians on it. Very good.
Starting point is 00:07:56 But really, it's his stand-up, his stand-up. I definitely recommend that you enjoy his stand-up. And then we'll take a quick break and grab a quick bite with Matt Walt. Matt is one of the founders of UCB, and he used to be theater, which I think is still going on. And he is so damn funny. He's been so, he's been a part of every single, I think every comedy made from 2000 on. He is in it. It's insane. Hangover, um, stepbrothers, uh, old school, elf. I mean, he just, he appears, I was watching Get Hard the other night with Will Farrell and Kevin Hart, Matt pops up. Anytime there's something funny going on, you know Matt is going to have a
Starting point is 00:08:50 scene in it. It's crazy. He's so good and he's so subtle. And I really was excited to give him a call today because he was one of the first people during the beginning of the pandemic last March. We connected. Everybody had run out of flour. Everyone was panicking. No one knew how they were going to make bread. I grabbed some sourdough starter and a loaf of bread and head over. to Matt's house. And we're friendly. We're not like, we don't really hang all that much. But I always admired him.
Starting point is 00:09:23 And he was nearby. And I just got my car and took off to bring him some Saturday. He seemed like a thoughtful person who would get into using the sourdough starter and making bread for himself and his family. And he has. He's kept it up the entire year. So we're going to give a quick call with Matt. And so great to check in with them. I mean, it really is like this milestone in this crazy pandemic, which the one bright spot is it created relationships where there weren't any.
Starting point is 00:09:58 And it also made us all focus a little bit more on what we're eating because it was kind of one of the remaining joys, right? I mean, it was really what we're eating, planning, thinking, getting delivery. drinking all of that. I mean, it was just literally, that was our joy. And I hope it lingers when this is all over. I know I have a ton of cookbooks that I've gotten during the quarantine. So I'm going to keep going. I hope you do as well. Okay. So first off, let's start with Gabriel Iglesias. It's a great conversation. Enjoy. And then we'll get Matt right after that. Hey, I love that picture over your shoulder of the. Thank you.
Starting point is 00:10:47 Yeah, that's the first time we use that. It's the, shoot, I don't even know how to do it right. It's the Volkswagen. I love that. And see, that's something else. One did. One took the picture of the cars and he put it up on the screen. I said, I need something different up there because we keep putting up the same,
Starting point is 00:11:03 the same old background. And it's like, it's just going to look like the same thing happening over and over. Are you, are those your cars? Yes. Wow. No way. Anytime you want to come down, dude, I know that you're big on your, you know, baking bread, and I've recently started.
Starting point is 00:11:20 I am now working on my red lobster biscuits. Nice. I'm going to make this. I just got this a little while ago, so I'm going to make this happen today. Red lobster biscuits from a box. Those are going to be delicious. I guarantee it. Very nutritious, too.
Starting point is 00:11:37 Yeah. I have a 1967 blue Volkswagen Beetle. Oh, very nice. Oh, I love it so much. There's only 48,000 miles on it. That's actually really, really low. Yeah, it's all mint. But man, those are, I've wanted a bus forever.
Starting point is 00:12:01 If you want to get one, I know the guy that buys them and I know the guy that restores them. Do you have the guy that puts the different motors in them? And the mechanic, yes. So the one that gets them, the one that fixes them up, and the one that makes them run good. Do you have any with the Porsche motor in it? No, but I got one or two that could keep up. Wow. Those are beautiful, game.
Starting point is 00:12:27 Those are really nice. Were you into those? I want to come down and take a tour. I got a couple of them. Oh, yeah. When did you start collecting them? I started collecting about five years ago. I went to Leno's garage and he's the one that got me started on the collecting of cars. Because before then, I only had a car. And he's like, what are you doing with your money? What's going on? I'm like, oh, man, what's, you know, why are you asking? He goes, well, he goes, I can, you know, I see what's, what's happening. And he says, and people are going to tell you how to invest. He goes, but I'll tell you right now that if you invest in, you know, classic cars, you can enjoy your investment and, you know, it will go up and invest. And, you know, it will go up and.
Starting point is 00:13:06 value if you decide to sell. Wow. Really? It's that sound of an investment. So yeah, all of them right now. If I were to, you know, liquid-liquidate, which I'm not. But if, you know, if the kaka I ever hit the fan, I got, I got something to go to. That's beautiful. What's your favorite? Whichever the new one is. Whichever the new one is, is always the favorite. It doesn't matter. It's just like, ooh, it's the new shiny toy and that's what I'm excited about. And that's the one I want to I haven't enjoyed the most. Oh, it's beautiful. That is gorgeous.
Starting point is 00:13:38 Well, thanks for doing this. I mean, I know you're busy. You've got your show cranking out. The only thing that's that when I was, that I didn't feel guilty about is that you're not touring like crazy because usually you are out there hitting it harder than most comedians. How are you, are you gearing up?
Starting point is 00:13:55 Do you have a plan of like when you're going to start poking out again? You know, I'd like, first of all, I'd like to see about getting fully vaccinated. and then once once that happens, and I see how I'm feeling physically, because I feel good right now, but then again, I'm not sick, and all I've had is time to walk and work on, on, on, on eating better.
Starting point is 00:14:18 So that was the first thing because, you know, I don't, you know, I know that there's, there's people out there doing stand up across the country. Yeah. And in different venues, but I'm still not at that place where I feel comfortable enough, uh, me personally, because I'm a walking underline health.
Starting point is 00:14:33 condition, you know, I'm going to be 45. I'm overweight. I'm diabetic. I got, you know, cholesterol, high blood pressure. I got everything, everything on that list that says Rona likes you. That's, that's where I'm at. And so for that reason, I says, you know what? Better I just stay home and work on getting better. And then once I see a little bit of light at the end of the tunnel, which with the vaccine. And then being able to find somewhere that maybe I can post up and set up a residency. This way I can have control of the backstage area and the way that the layout of the room is. So I can be consistent with it because I think the traveling is the part that puts you, uh, you know, that exposes you more than anything. Yeah, that's smart. You're always
Starting point is 00:15:15 thinking. You're always thinking. I knew the wheels would be turning in the right direction. That's a great idea. Get your own spot where you could actually control the shows because people will come. People will and you'll be able to put together a lot of material without having to really leave home. It's a pretty brilliant stroke. So now the idea is where can I find a nice spot where I can post up for like a, you know, a few weeks or a month. Yeah. Where I'm not going to go stir crazy and just be like, ugh. Yeah, yeah.
Starting point is 00:15:44 The places that are open, pretty much anything outside of California. So if I want to go set up somewhere, I think Vegas is about to open it up like in about a week. Oh, really? Yeah, I heard something about all the casinos going back to 100%. Whoa. Do you know it was it? March 3rd. 100%.
Starting point is 00:16:03 Wow. Man, it's really happening. All right, so let me ask you this. When are you getting the vaccine? Are you on the list? Well, being that I'm an underlying condition, very soon. Yeah, I would think so. Very, very soon.
Starting point is 00:16:16 So, you know. I was just listening to a report on the radio before we sat down about how in the San Diego area, that they're really trying to vaccinate minority groups because they, are the people who are out there working, and they also have underlying health conditions that they're greatly affected. But all of the sneaky rich white people from L.A. are copying the codes and jumping the line,
Starting point is 00:16:49 and the people that really need it, and they're really desperately trying to get it to these communities are being out-foxed by the people who have free time, are on their smartphones all the time, and can go in and get it. And it's become a real problem. Especially the people that are auctioning off, they're like, you know, like I've heard of people.
Starting point is 00:17:13 Like, yeah, basically like, you know, wear the mask going as me, kind of a thing. How funny would that be if there's a bunch of Gabriel Iglesias is just showing up for the shot? Right? No, look, it's me. Look, smell in the car. It smells like cake. well i hope you get it soon you definitely uh you should get it i mean it's it's no joke you don't
Starting point is 00:17:38 want to mess around with this thing i was one of those two where you know i don't normally get the the flu vaccine uh the flu shot um i just been like you know what how about i wash my hands all the time and i try not to engage too much uh you know face to face yeah uh and and just you know just try to live a little bit better and see what happens and if i get sick then i get sick but This is one of those that it's, it's not so much an at-chew sniffle thing if you're not the healthiest. Yeah. So I waited out and I'm like, you know what? I really didn't want to just because, you know, like my sister every year would get the flu, the flu shot.
Starting point is 00:18:15 And she'd always be sick for two weeks. And she's like, look, this way I won't get the flu. I'm like, well, what the hell was that? You know? Like eight boxes of Kleenex and like, I don't know how much Vicks. I could have done that in three days, you know? I'm still at work. Yeah.
Starting point is 00:18:34 So in this case, it was like, it just makes more sense to go for it. And whatever I got to face down the line, because everybody's going to warn you, oh, they might have implanted something or something might be in there. Yeah. The way I see it, I've already, I've had an incredible 44 years. It was awesome. And if it goes away tomorrow.
Starting point is 00:18:50 So, hey, you know what, it was a good run. No, no way. That'd be way too early. You got to be, you got to respect this thing. you got to get the vaccine and get it done. I talked to Brian Regan earlier because he's a new special coming out. Yeah, it just came out at midnight. I haven't seen it yet, but I saw the promos for it. I definitely. You're going to be impressed. It's really good. But he got COVID, because he was running around touring pretty heavy to get ready for the special. And it was no joke.
Starting point is 00:19:15 He was, he was like checking his oxygen levels. It was, it wasn't just one of those like asymptomatic didn't affect him. And he's, you know, it's not the greatest shape. But, you know, he was, he was, he was, like, but he's also not, you know, somebody that much older. So you definitely don't want to get it for sure. Yeah, so I'm in, I'm in all the way. Yeah. All right. Let me ask you this, because we've talked a lot.
Starting point is 00:19:39 We're good friends. We've come on my shows before and we've hung out of clubs and stuff. But I never really got to ask you about your growing up and where you came from and what you were eating when you were doing it. I believe, and I apologize. if I'm wrong, but I believe you were raised with like five or six brothers and sisters? Four sisters, one brother, but they were all much older and out of the house by the time I showed up.
Starting point is 00:20:10 There's a, I want to say a 14 year gap between my sister and myself. Pretty much, it was like growing up an only child and then these people would just show up and visit and talk smack about how they didn't have their own room. Oh, man. You were like beyond. spoiled. It wasn't bad. You know, when you're the last one, when you're the baby, you get all the attention. And they all had to go to Catholic school in Mexico. And I got to chill here. And so my mom didn't send me away. She's like, no, I actually wanted you. So that's amazing. It was a great,
Starting point is 00:20:44 great childhood. It was just mom and me. My dad was out of the picture. He came back into the picture probably about 10 years ago. Showed up to one of my gigs got in line to do the meet and greet like everyone else. So I got to respect them for that one. Whoa. He didn't try to cut the line like, you know, you know who I am? No, he got in line like, like everyone else. And the funny part is he was actually holding a DVD. And I'm like, everyone in the line is holding a DVD for me to autograph it. I'm like, well, you know, what am I going to write? Yeah. Did you have any idea he was in the audience? You know what? Someone had tip me off early on. It was actually at the Comedy Magic Club. It was
Starting point is 00:21:25 Richard, the manager, Comedy Magic Club. Hey, man, there's some guy in the audience telling everyone he's your dad. And I'm like, you know, and I've heard stuff like that before. Oh, there's a family member in the audience. Someone's claiming to be such and such or such and trying to get backstage, trying to get a picture, trying to, you know.
Starting point is 00:21:41 In the beginning, I'd fall for it all the time. And then I'd question them, well, who do you know? Or how are we connected? And they're like, hey, man, I was just messing around. It just, let's take a picture, you know? I just figured it was someone else messing around. And so I already had that in the back of my mind. So I'm always looking at the line when I'm taking pictures and signing. You want to
Starting point is 00:21:59 see how many people are left. And I saw a dude. And I'm like, oh, it clicked just like that. I hadn't seen him since I was, I don't know, maybe five, five years old. But yeah, the eyes, I connected right away. I was just like, yeah. And so I freaked out and I had my manager pull him out of the line. And we wound up getting together a couple days later and just, you know, catching up. And I didn't have any, any, you know, anger towards him like I did when I was younger. I mean, I'm all growing up now. Life turned out well. And my father was an entertainer, a touring.
Starting point is 00:22:35 So what did he do? He was a mariachi. So, yeah, that's how my mom met him at the club. Oh, of course. You did the set. Hey, what you doing after? Sure, sure. So I understood and I had a better, you know,
Starting point is 00:22:53 just a better overall of of him yeah now me being you know who i am and what i do and it's it's like all right so i the conversation was a lot easier uh it still was one of those hey man you know i could have used you uh back when i was a kid but sure but i get it i get it what was that a was that a tricky road as a kid like trying to make sense of that my mom was so badass she she just she did everything you know so i mean whatever a conversation i needed to have uh there was there was no conversation that was off limits she made sure that that i understood right from wrong she and you know she made sure that i knew how to uh be respectful and and caring and just there was nothing that she didn't handle so i i you know you don't know what you're missing yeah if if you don't know
Starting point is 00:23:44 what you're missing but and now that i'm all you know growing up and everything i wasn't missing anything except for just that person there that hey dad yeah yeah yeah just to just to make the logic sense of of it all every year every year i would give my mother a mother's day card and a father's day card oh really yeah she thought that was the fullest thing i'd get hey mom he goes that's right and if he ever shows up you don't give him my card oh she must have been she what how did she react it was a she was a little pistol when she found out that i that i that i you know reconnected with him. Yeah.
Starting point is 00:24:19 First thing she goes is, who looks better? And I'm like, are you kidding, Mom? You know, my mom was, she was older than my father by a few years. So I'm like, Mom, you're older than him. It doesn't matter. Who looks better? That's what she wanted to know is who look better. And I go, he looks fine, mom.
Starting point is 00:24:37 He looks okay. That's funny. She was okay with it. She was, you know, it was fine. I did ask my mom if she would be willing to take a picture with my dad and me so it could be a you know so i could have the three of us together yeah just to have that picture sure it was not about it she's like oh didn't want to see him all right my dad was cool with it he's like yeah sure let's take a picture yeah but he yeah but he of course he's got more
Starting point is 00:25:07 energy he's he was doing mariaz running around she was doing all the all the hard work was she uh was she a good cook uh you know what um I've had, you know, many dinners at other friends' houses. And on a scale of one to ten, no, no, my mom, that wasn't her strength. My mom's strength was the way she raised me. Her level of discipline and just how bad ass she was. But cooking, her big thing was tamales. She would make tamales and not to be stereotypical, but this was a Mexican mom who made tamales
Starting point is 00:25:40 every year for Thanksgiving and Christmas. That was her thing. And then everything else was, you know, just pretty regular. Yeah, just get you. There were certain, like my mom would make me scrambled eggs with cactus. Scramble eggs with cactus. Yeah, so it's in Spanish, no pales. And so you take the cactus and you dice it up in a little tiny little strips.
Starting point is 00:26:00 You cook it and you mix it with the eggs. And it's, I know it sounds like something you'd eat on Fear Factor, but growing up, that was, I didn't know. And I'm like, okay. And, yeah, yeah, now, no. If I smell it or you taste it, it'll make me think of my mom. And then I'm like, okay, I'm good with that. And then I'll, it's not good? You don't like it?
Starting point is 00:26:22 Man, yeah, no. No? So, yeah, so when you ask if she was a good cook, her drive-through skills were way better. All right, so here's a question. I was talking to somebody from Texas, and they kind of diss me a little bit when they were like, we were talking about Texas and Southern California.
Starting point is 00:26:46 and they said, yeah, it's cute that you guys think that you have good Mexican food. I was like, all right, I need some. I'm here with the question. I needed somebody who really knows. All right. The most legit Mexican food, of course, is going to be in Mexico, but being that L.A. is like the capital of Mexico. Yeah.
Starting point is 00:27:13 You know, I've gone to Texas many times. My favorite place to eat is in San Antonio. The food is incredible. And it's, it's more, it's called Tex-Mex. They wouldn't consider Mexican food. It's text-Mex. Right. So the spices are a little bit different.
Starting point is 00:27:29 The way that they prepare the food is a little bit different. It's very recognizable. And you're like, okay, this is this and this is that. But the flavors are different. Right. And me personally, and I know I'm going to set myself on fire with this one, but I do prefer Tex-Mex over California Mexican food. It's like, for example, there's a thing called pork isada tacos,
Starting point is 00:27:51 which I've never seen in California. It's pork. It's a taco. There's cheese, there's sauce. And I'm like, I've never seen or tasted that here in California. And that's like my favorite. That's my jam.
Starting point is 00:28:03 So I will settle it for me personally. Tex-Mex food has more flavor than traditional Mexican food in California. But if we had to pick Mexican food, Mexico has better food overall. If we go to Mexico, then that's going to take place over even the Texas. Yes. Yeah. Hands down. I thought you were going to ask me like, oh, Texas.
Starting point is 00:28:26 I'm like, oh, I feel a what a burger in and out question coming up. That's always the battle. What's better? What a burger are in and out? And I'm like, hmm. Where do you come down on that one? You know what? They're both very special in their own unique way.
Starting point is 00:28:41 I can only handle in and out for maybe three days in a row and then I'm done. Three days in a row. That's it. That's the max right there, which already sounds excessive. But what a burger I could actually eat at every single day and eat something different. So the variety at water burger and plus you can have breakfast at water burger. So you can really mix it up more. Right. What's your in and out order? Four by four. No tomato, no onions, protein style. What's four by four? Four, oh my God, four pieces of meat, four pieces of cheese, wrapped in lettuce.
Starting point is 00:29:20 Oh, keep it. No bun. If you get rid of the bun, you don't want to go crazy. Yeah. I don't want to break the diet. Do you like their fries? You know what? If we could do those, if we could do like animal-style fries, but with McDonald's fries,
Starting point is 00:29:40 I think it would be like, oh my God, it would be the best. Yeah. Only now fries are okay. Right. But for some reason, McDonald's, I don't get it because you know McDonald's, it's, it's not, you know, McDonald's is McDonald's. Right. Yeah. So, we're not asking questions.
Starting point is 00:29:56 We don't need to know what's in it. Yeah, but for some reason, they got their fry game down. They really do. They really can't be beat. So when you're, when you're out on the road, how do you eat when you're on the road? Are you a eat before the show guy? Are you a, I see you, I'm just guessing, but I see you as we do the big show,
Starting point is 00:30:19 you've got all your buddies with you, there's a big meal after the show. That's exactly the way I do it. And that's probably the reason why I'm paying for it today. But it's hard for me to eat before the show. Yeah. You know, I'll have a writer for the dressing room. And it's very basic.
Starting point is 00:30:37 you know we'll have a lunch meats uh like ritz crackers cheese platter and stuff like it just you know stuff to kind of like you know real quick but nothing that's too heavy where um because if if i'm on stage and i'm full oh it's such an uncomfortable time yeah because you're talking the stomach acids are going off and keep burping into the mic and you swear they can't hear it you know you're you move slower so i i just i would much rather go up on stage uh with an empty stomach or just walk up with a with a drink so I can take a couple of sips to keep the throat coated yeah and then have have something to eat afterwards so we usually wind up at whatever's open at midnight which uh isn't usually the best option so sometimes we'll pre-order the food and then just have it ready
Starting point is 00:31:24 on the bus and then microwave or or if it's cold food then we can you know kill it but right um yeah the meals happen after the shows and uh in some parts of the country man you you don't got a lot of good options. I mean, you're stuck with Walthwell House, IHop, maybe a Perkins. Yeah, which is fun, which is a fun thing to roll into after a show, you know, those kind of spots, you know, you get, they'll do okay. You'll feel it at three in the morning. Some places like crystals, I want to say crystals in like Florida, it's like the sliders. It's kind of like their version of White Castle. Yeah, yeah. At the time, it's like, this is awesome until it's not. Yeah, exactly. When you tour, how many, how many people in your crew? You've got an opening act or two?
Starting point is 00:32:15 It's, well, between production and talent, it's about 20 people. So there's two tour buses. So, you know, we travel with our own sound, our own lighting, you know, guys that set everything up. And plus tour director, tour manager, security. And then for a while, I had five comics on the road. Five. And then I went to four, then three, then two. And then this year, it was just Alfred Robes and myself. So it was just two comics.
Starting point is 00:32:48 Wow. And this way, he was, you know, he had more time on stage. And then I was just able to go longer. Yeah. So I was doing about 90 minutes. He was doing about 2025. Right. Right.
Starting point is 00:33:00 Well, that's a good way. We try to keep the shows a little bit out, two hours or less. Yeah. Anything over that? People start to tune out. Yeah, to have that many guys before you is a bit much. It's a lot to ask the audience to be reintroduced to another comic voice. Yeah.
Starting point is 00:33:17 And you know when I noticed that it was excessive is when I saw Kevin Hart do it. I went to go watch Kevin Hart's taping of his special that he did in Philadelphia. And first of all, to be in a football stadium and watching a comedian in a football stadium is surreal. The production level was just insane. The screens were massive. And I was sitting in the second row. And Kevin still seemed like he was so far away. So it was just, it was awesome to watch.
Starting point is 00:33:46 But we did have to sit through like five of his opening acts. And like the first two, I was like, these guys are pretty funny. And then it's like, and here comes another one. And here comes another one. And then, you know, I looked at my tour manager who's sitting with me. And I go, is this what it feels like when people are at my show and they're getting impatient? shit and they're like, what the hell? Where's, where's the guy? And she's like, yes, I've been trying to tell you this. You have too many people on your show. And I saw it like that. And I was like,
Starting point is 00:34:13 you know what? I need to, I need to get on stage sooner. Yeah, for the people are getting tired. Yeah. And I noticed that, man, the reaction was so much better. People, people had energy. They didn't have to get up to go to the bathroom. Yeah, of course. I mean, they like, they like being introduced to somebody new. They like that they, and it's a friend of yours. Like, you've given the stamp of approval. That's like a nice treat, but one or two of them is. Yeah, but when it's, it was literally five comics. That's a lot of people to feed.
Starting point is 00:34:42 At one point, I had, see, Martin Moreno, Alfred Robles, Rick Gutierrez, Sean Latham, and Trevor Noah. No way. I was like, that's my claim to fame right there. You know, I took Trevor on the road for a year. That was, that was awesome. I don't take any credit. I don't want to be one of those guys.
Starting point is 00:35:01 like you know I gave him a start bullshit he was gonna be a superstar regardless I was just that I got to work with him when I did he's such a guy it was so funny too because um there was a couple of comics on the bus who loved to argue politics they were just big on politics that's not my lane I stay out of it but it's fun to watch when people are going at it and Trevor is just so informed he's so informed and he's young and he's mine he retains all this information. So to watch one of these guys start to argue and try to prove points. Yeah. And Trevor's just like, no, I don't think so. And he would tell like he would get into arguments with, Rick Gutierrez, who's a funny comic, man. He's, you know, been around forever and he's awesome. But Rick,
Starting point is 00:35:45 Rick is one of those guys. He's more passionate than anything. And so he'll get really loud. And Trevor would just look at Rick and go, you know, Rick, just because you're louder doesn't mean you're right. And then he'd say, you're the only person I know. know who likes to argue facts and I'm just sitting there like oh they're gonna go blows they're gonna freaking go out so when I saw last year at his show before everything went down I told him I says hey all that time you spent on the bus arguing with Rick prepared you for the daily show he goes my word yes that's great he's a but yeah five comics on the road it was it was it was a lot it was that is a lot that is so where are the spot
Starting point is 00:36:27 that you really like to eat around LA, like when you're, if you're banging around and doing spots or just seeing friends? You know, if I'm, if I'm gonna go do a set somewhere, usually I like going to the ha-ha, the ha-ha cafe. Yeah. And Jack and Terry have always been super nice to me and just, I walk in and they're always offering,
Starting point is 00:36:50 like, are you hungry? You got to try our latest thing. And so they're always, you know, they're always giving me like, oh, the chef just came up with this. You got to try this. And so I was always like their guinea pig stomach. And so there I am eating.
Starting point is 00:37:02 And again, I don't like eating before I go on stage, but I'm not going to say no to a free plate in my face. So the food there has always been awesome. And I think it's, you know, more people should, if they're open again, go go check it out. Because they have a really, really good menu of food and the service and everybody's super nice. Yeah, yeah.
Starting point is 00:37:21 It's so funny because that's, that answer is the same answer I give people when I'm in New York. It's like people think that you know all these spots and you're like upstairs from the comedy cellar, the olive tree. They've got great wings because that's the only place I go when I'm in New York. I'm not going to really a lot of restaurants. I'm just at the club and eating what I can before I go home. You know, and again, at end of the night in Hollywood, I used to wind up at Pinks. And I know that sounds very touristy, but they're open late and it's, you know, what you're getting. And it's always great.
Starting point is 00:37:54 Yeah, yeah. The reason why those lines are long at that. You know, as comics, usually the hours are messed up when we're eating. I wish I could say that I made better choices. But you enjoy it. And you've never, you don't, you know, and you always, you do take care of yourself. You don't party. You don't like, you're never like in trouble.
Starting point is 00:38:12 You're never like a big drinker or any of that kind of stuff. It's like, you know, what's wrong with enjoying food? I mean, that is a nice, in the list of things that are bad for you, it's not so bad. Oh, Red Lobster Biscuits. Where did you even get that? He's holding up if you're not, if you're only listening. He's holding up. Oh, I'm sorry.
Starting point is 00:38:36 Yeah, I did a joke a few years ago about Red Lobster and how my son was offered a job at Red Lobster. And as soon as they offered him the job, I was like, I'm going to get free biscuits. And then he said, no. And then, you know, I was like, come on, you should get the job. And his mom's like, let him make his own choices. and I called her a biscuit blocker. Since then, that's where the whole red lobster thing comes from. That's beautiful.
Starting point is 00:39:02 But I am a fan of Red Lobster. And they actually heard the bit. And when I was in Florida, I was invited to go to the Red Lobster testing facility, which is right down the street from the arena. And I got to go in there and they let me make biscuits. No way. I got to see it as a little biscuit nugget. And then all of a sudden get cooked and baked.
Starting point is 00:39:23 and I got to eat it fresh out of the oven with butter. And it was like, oh, my God, this is like, you know, I know for a fact I took someone's make a wish. Yeah, that's amazing. Absolutely. Do you ever think about that? Like when you're putting together your jokes, putting together your act, they're like, I should drop in. Now I'm starting to think that way,
Starting point is 00:39:43 whereas before it was just very organic where I would make references to certain things. Yeah. But yeah, like a lot of companies now that I've made references to in the past, One of them is a hot sauce, a Mexican hot sauce called tapatio. Oh, I love tapatio. Okay, you know what I'm talking about? So I did a bit about them years ago when I talked about my mom and my dad.
Starting point is 00:40:05 Remember, I said my father was mariachi. And I asked my mom what my dad looked like and that my mom grabbed the hot sauce and she said, he looks like that. So people would come to the shows with bottles of tapatio and they're like, hey, we brought your dad. Will you sign your dad? And so I would sign bottles of tapatio at the show. And it was just, you know, it was one of those jokes from way. back in the day. And recently, I had the opportunity to hang out with the Tapatio family.
Starting point is 00:40:29 That's like Mexican royalty right there, man. They, they're legit. It's not, it's not corporate by any means. It's a family and it's family ran. They're coming up on 50 years of product. And so they, you know, they just wanted to pick my brain and see, you know, because they want to do something after 50 years and maybe tell a story and why not better to go reach out to somebody who's a legit fan of their product and then trying to find the right you know name so we got we got to hang out and i got a chance to visit their facility it's in vernon here in california and to watch the the sauces going down it looked like the opening scene to la vernon shirley i know you know what's up where all the bottles are moving like to put a glove on it so that was pretty cool and it's all
Starting point is 00:41:13 because of a bit that i did years ago that's so great oh that's the best i made references to diet coke so I'm waiting for Diet Coke to call me. And Mercedes-Benz. The one that really hit hard was Lexus. I told a story about how there was this guy who basically wanted to be my, he wanted to be my sugar daddy. And he told me that I could quit comedy. And it's a true story.
Starting point is 00:41:37 He told me that I could quit comedy and that he would take care of me because the guy, the guy's rich. He's loaded. He owns a very, very popular place. I'm not going to say his name, but he owns a very popular, establishment in Philadelphia. And he made it clear. You can quit and I'll buy you a Lexus.
Starting point is 00:41:57 And I don't know where the hell the Lexus came from, but I'm like, the fact that I even thought about, like, no work. I told the story about Lexus and I even put out a tweet where I said, hey, man, this would be the car. This is a bad car. Lexus found out they came to the show when I did the taping of the special, next thing I know, there's a Lexus here.
Starting point is 00:42:22 No. Alexis. No way. And you didn't have to live with a strange man. And I didn't have to live with a strange. He was not strange. But I didn't have to go that route. I didn't have to hold myself out for the car.
Starting point is 00:42:38 Again, I thought it was cool. I mentioned something. It was organic. I wasn't trying to, you know, let me product place or anything. Yeah, yeah, yeah. Not to me. That's amazing. I thought that was very, very cool.
Starting point is 00:42:49 Wow. Well, if I were you, I would just keep doing jokes about In and Out and What a Burger and see what happens. You know what? It's happened a few times where, like, for example, I talked about Jack in the Box, and they started sending me gift cards, and they even had a fluffy meal that they put out. Really? Yeah, it was very quick, but I was like, oh, my God, okay, this is cool, a little campaign. You never know.
Starting point is 00:43:13 You never know. It's careful what you put out into the universe, because it's great. the universe might throw it back at you. That's amazing. Well, thanks so much for being here, Gabe. It really is great. That's a great story. I love hearing about your mom and the cover of the tepottito bottle showing up at your show.
Starting point is 00:43:33 Oh, and here's real quick. Something that not a lot of people know is that the spelling of my name is incorrect, but I still spell it the way it's supposed to be spelled. My last name is spelled, I-G-L-E-S-I-A-S. That is the correct spelling of Iglesias. Legally, my name is spelled I-G-L-E-C-I-A-S. And that's because my mom did that intentionally because my father was at a gig instead of being at the hospital when I was born.
Starting point is 00:44:00 And he was so proud of his last name that she said, in spite, I'm going to change the spelling of it just to mess with him. So my dad wasn't there when I was born. He was at a gig. And for that reason, to this date, I still pay for it in my taxes. when I go to the airport, when I'm filling out any, you know, legal forms. Yeah. I always put S and it always, they always go, wait a minute, it doesn't match.
Starting point is 00:44:23 And so I'm always having issues with, you name it. You name it. You name. I've missed flights because the TSA guy at the gate goes, no, man, the spelling's off. Go back and get one with the spelling. Oh, my God. I'm like, you can tell me a letter and, you know, a lot of them would do that. But, Gabe, you must give thought at some point that you are that guy in a way.
Starting point is 00:44:45 You are an entertainer. You have missed things in your life because of a gig. That is, it's kind of amazing that he didn't raise you, but yet you have that same entertainer streak in you. And that's when they say it's in the blood. Yes, I firmly believe that. Yeah, amazing, isn't it? It really is.
Starting point is 00:45:05 That's like, that's like when twins meet after being separated. You're like, oh, we live the same life. It's a pretty amazing thing that it's in your blood that way. So who knew? Yeah, so crazy. Well, you're the best. I love seeing you. Thank you for spending time with us.
Starting point is 00:45:20 And whenever you figure out what theater you're going to be holding up and going to work on stuff, give me a call. I'll come by and I'll do sets with you. Definitely. I would love that. And that'd be freaking awesome. And I want to taste your bread, dude.

Starting point is 00:46:21 Tom. How are you? Good morning. Good morning to you. Yeah, nice to hear from you. Yeah, it was, you know, it's funny. I was looking at my photos, and it was March 23rd when I... Oh, the exchange?
Starting point is 00:46:40 When I... The big exchange. As it's known in the press, the big exchange. Yeah, you were so sweet. You gave me some of your starter, and I named it Dovid 19. Good pun. It's amazing. And I've been regularly baking a sourdough every week or two.
Starting point is 00:47:04 Easy. Wow. So you kept it going. It's amazing. You know, it's amazing, too. You'll appreciate it. I literally made my best one. This weekend because our oven broke and I went to my brother's house and he has a much better oven and I never realized it.
Starting point is 00:47:19 The difference like a really fully circulating, you know, evenly burning oven. Anyway. Yeah, yeah. Did that. Do you use a Dutch oven? I used to Dutch oven and then I take the lid off and then I put it on the rack. Right, right, right. Yeah, yeah, yeah.
Starting point is 00:47:39 I do all those steps and it comes out shitty. I've seen your videos. No, it comes out really well, but the last, no, I've gotten better. It comes out really well. Yeah, pretty good at it. Yeah. God, isn't it crazy? I mean, there's a picture of us, like, we kind of have our masks on.
Starting point is 00:47:55 We kind of have them off. We're kind of just like touching elbows. Yeah. Well, this will hold you. I remember driving away thinking, well, this will be good. He'll be able to make his own bread for the next couple weeks before we go back to the store and everything's back to normal. Well, that's still when That exchange happened
Starting point is 00:48:15 When flower was scarce That's when people were like, you know, raiding the stores and shells were empty and flowers Where they found Yeah And it was like, oh, if we're just I should give you a little A little leg up and put you in the prairie life
Starting point is 00:48:30 Is that where I live? The prairie life, where's that? That's, you know, when you just A lot of times people picture the prairie is like, you know, on canvas or something, but I see it in the Val, San Fernando Valley. Just as long as you have a glob of sourdough,
Starting point is 00:48:48 you're kind of a prairie guy. Okay. How have you held up? Have you been working? You know what? I snuck out for a movie I wrote, with a buddy of mine, and we filmed it in Tulsa in November,
Starting point is 00:49:06 co-starred with Eva Longoria, and we're finishing that. Yeah, crazy. Good for you. It was like this window that Tulsa and Oklahoma had credits and the numbers were pretty low and we got out of town before the surge came back. Wow, that's amazing. It is amazing. And we happened to have written a story that's like a couple that just goes into the wilderness to get away and put their screens down. It's called unplugging. So it was kind of perfect to have a small crew and everything. So we got lucky. Wow, that's amazing. Is that the first time you've done that? like made a film? No, I'm always, I've directed two small improv movies and then I've done some like TV shows
Starting point is 00:49:51 I've directed and I've written, I've written a couple movies that I've been in. So I'm always pushing like small movies that have small audiences, but I'm always lured back to doing that. Wow, that's amazing. That always, that's always like, you know, as a creative person, and that's one of the things that always goes through my mind is like, yeah, and then maybe one day I like a movie and then it's like, oh, God, where do you start?
Starting point is 00:50:18 It seems like such a huge thing. Well, it really is never ending. Like, TV's just as great, and I think TV's better in some ways, but I don't know. Yeah. How about you? I've been good. I've been doing radio, and I snuck out and did stand up. up until like November and then I took a break.
Starting point is 00:50:42 Where were you doing weird? I went to, I would go to clubs where I knew the owners for years and the city was at an okay spot at the time. Like I went to Salt Lake City. I went to Denver and I really went because, you know, they'd have capacity. So it was cool to just like roll into town like, yeah, the show sold out guys. Sorry. I'm kind of killing it
Starting point is 00:51:12 but then it got too weird because I didn't want to push my luck you know there's some comics that went out and just like I'm just going to get COVID and keep going I don't think I'm going to do that so did stand-up ever stop any I mean it sounds like it kept squeaking through in various cities
Starting point is 00:51:30 yeah it kind of kept going in some some places really didn't stop you could perform in Florida and Texas like it's 2007. Wow. Like full capacity and yeah. It's like one comedian friend of mine said he just got back from Tampa and he said, I think they're celebrating that the pandemic is over.
Starting point is 00:51:58 Pretty amazing. That is. So if you funny. Have you, have you cooked anything else other than bread? Have you like, cooked more during all of this, or have you, is that been your, your main thing? Yeah, I sort of
Starting point is 00:52:16 have taken over dinners, you know, to help my wife. Because I'm around, obviously, we're all sort of locked down in our little compound, so. Yeah. Yeah, I'm not bragging, but I'm pretty great at just about anything. I really, I mean,
Starting point is 00:52:32 simple, I can follow a recipe like I made some, like, oh, some tomato jam that my friend told me, like, some New York Times recipe. Like I've gone into like new stuff. We can kind of like chutney in a way,
Starting point is 00:52:45 but really good. Oh yeah. I do a lot of, uh, speaking of sourdough, I always take the extra like starter and like make like a scalyon pancake. We have like scallions and I have little garden
Starting point is 00:52:57 and I'll chop some scallions up and then make a little scallion pancake out of sourdough. Oh man. That's right. I remember you sent me a picture of that. Yeah. And then, uh,
Starting point is 00:53:06 I'm pretty great with like, stews and chilies and spaghetti you know nothing fancy but I can sloppy Joe's nice no and then if it's so but nothing I guess not like a four star restaurant quality stuff but I am pretty solid but that's good
Starting point is 00:53:28 that's a good array drilling like I just made you know classic is just get something to marinate you know in the fridge for a day Get the grill going. I made a nice little steak and chicken, and I've learned to cook salmon and fish on the grill. That's amazing. Well, I think pretty good. And then I got like all these spices and rubs for Christmas that I sort of been using from my, like my brother sent me.
Starting point is 00:53:57 Wow, that's amazing. Are you thinking of not getting the vaccine so you can keep up your new career as a chef? I wish I could be a chef. that was that really sounds great. Can I do both? Can I get the vaccine and BESha? Yes.
Starting point is 00:54:16 If you do that, then you can invite me to dinner. I would love to, yeah. That would be great. Can you imagine that we'll be able to sit inside and eat across a table? Yeah.
Starting point is 00:54:27 And you know what's interesting is when we were in Tulsa, we did eat a meal inside a restaurant. Mostly we would get takeout, but there was a restaurant that we were like, the only table in and we were able to eat a table together, which was strange. Yeah, that is bizarre.
Starting point is 00:54:44 It was back in November. Are you cooking more? Yeah, I'm cooking like crazy. I'm doing the same thing. So, yeah, I'm just like, I've got every, I think I get, like, every other week I get a new cookbook from somewhere. Then I just sounded cool. And, you know, last night I made a big rigatoni dinner with some fried zucchini.
Starting point is 00:55:06 zucchini on the side. It's like I'm literally at the point where like on a Sunday, I just figure, oh, this is a day I'm going to be in the kitchen all day. And I go in there around two or three and don't come out to like seven. And I kind of love it. It's just noodling around and listening to music and drinking wine. Awesome. Yeah, it's been pretty great. Are you good at because what I don't do well is meal plan. Like in other words, my wife does the grocery shopping. So the way I cook. I actually worked in a bed and breakfast in France for like three weeks when I was traveling as a young man. Wow. I slept in this like bed and breakfast and I had to help. For free, I had to help the way like cook breakfast and lunch for the patrons. That's great. She just taught me how to like open. She didn't even speak English, but she taught me how to open the fridge and see what you got, put it out and lay it on the table and then she would build her menu from that.
Starting point is 00:56:02 Yeah, that's great. I don't meal plan. Like, I don't go, like, Sunday, I'll have a nice pork shoulder ready and I'll have my cheese ready. Right, right. Yeah, I know what you mean. I used, I was doing more of that, but now I tend not to go to the food store as often. Like, that's kind of like, you kind of plan it and then go get your stuff.
Starting point is 00:56:24 But the same way, like, we'll go do like a big shop. And then it's like, oh, well, this cauliflower has, like, one day left. So I guess we're making cauliflower tonight. Yeah. You know? Yeah. But that's kind of a cool way to do it too, is just be like, oh, all right, we've got to jump on this now. I think kind of research it and come up with something.
Starting point is 00:56:45 It's been, but I'm actually, I think you're, like, you're getting a cookbook and cracking up on a cookbook is, I like the ambition of that. I don't necessarily have that yet. Yeah, I recommend it. There's something cool. My daughter literally walked through the other day and was like, are you just like reading a cookbook? because I wasn't cooking. I was just in a chair by myself flipping through this book. I'm like, yeah, it's not weird, is it?
Starting point is 00:57:13 Yeah. But I like because it emerges you in it. And you start to, you know, they're telling you about where they came from and why they're doing what they're doing and cooking what they're cooking. And then it gets you excited to make it. It's, I recommend it. If you have the shelf space, because then it becomes a little addicting and you start ordering too much. Yeah.
Starting point is 00:57:32 No, no. That's a good, I was just thinking of pitching our cooking show. It'll be, it's called Great, Good, and Average, and you're great, I'm good. And then we get an average normal person on the show every week. That's a great idea. Well, great checking in with you. Thank you for taking the call.
