Starting point is 00:02:05 Yeah, that's right, right? Yeah. Oh, okay. I was just questioning myself. Yes, as Jackson. Yeah. So Selectman, I had to try and get that one down before we started. That's right.
Starting point is 00:02:13 That's tricky. That's harder. That's not really. But I thought it would be so perfect to, you know, 11 a.m. Why not? Monday morning. Everyone hates Mondays. Everyone hates Mondays, except for me.

Starting point is 00:02:30 It's much better than going to an office. You're telling me. This is my office. Oh, yeah. By the way, we're in my podcast office, my new podcast office in my house. Thank you for coming here. Absolutely. And it's very exciting.
Starting point is 00:02:42 But we don't have the curtains up. I don't have the right light fixtures. I'm a little embarrassed. It's a little makeshift office at this point. But the wallpaper's up and it looks badass. It looks great. And from what, you've said it sounds like it's going to turn into a full-fledged bar so that makes any room
Starting point is 00:02:56 better exactly it's going to be a full-blown whiskey wine bar and uh i love that you're a whiskey girl too i always joke and tell people that wine is my love and whiskey's my vice so hey that's a good song title there you go there you go am i allowed to just like say that your dad should we start singing yeah yeah do you do music no just in the shower just oh you're one of those yeah and karaoke after a few whiskies but oh yeah of course but oh yeah of course Yeah, Miranda. Miranda Lambert's my go-to. The deeper voice there. Yeah, you've got the deeper voice. Wait, that's tricky. Which one? Which Miranda Labort is your...
Starting point is 00:03:30 Ooh, I love Mama's Broken Heart. But, you know, I've worn it out at the AJ's Good Time Bar stage. So I got to make my repertoire a little more eclectic. Your dad has a bar in on... Yes, on Broadway. Just by the Preds Stadium. Yeah. Arena, whatever they call it. Well, I'm Canadian. I should know that's Arena. Okay. Yeah, yeah, yeah. That's awesome. I feel like I've been there once, but I don't really remember. Oh, it's a blast. They have at three different levels. Honky Tonk, sports bar, karaoke bar.
Starting point is 00:03:56 Amazing. Rooftop. Have you done karaoke there? Many times, embarrassingly, somehow none of those videos have gone viral. Oh, too bad. I'm going to make that happen. Yeah.
Starting point is 00:04:06 Enter Caitlin. Yeah, exactly. Until now. So we'll just drink wine and then we'll go sing karaoke downtown. Today? Yeah. Okay. You talked to me into it.
Starting point is 00:04:14 That's right. I am all about a good karaoke. My co-o-to karaoke is lady lumps, though. Oh, that's good. Yeah. See, I don't have. have the rhythm for it. I have to like pretend I like that are something. Yeah. Yeah. It's great though. It's fun. That's funny that you do karaoke. Um, okay. So you're going to be teaching me about wine. I like to
Starting point is 00:04:31 think I know about wine, but I don't. I really don't. You know what? The more you learn, the more you know you don't know anything, including professional sommeliers. Really? Yeah. Okay. So let's just start with how did you get into this? Like, have you always been passionate about wine since you were out of the womb? Yes. Like loved wine. They birthed me into a pool of Pinot Noir. There you go. Um, no, truthfully it's kind of funny because you know my parents i mean my mom is a huge champagne girl now but like you know i never grew up even seeing them drink very often like they'd have a beer at the pool or like with pizza right um but it certainly wasn't in their day-to-day repertoire especially wine and premium wine um i think kendall jackson chardonnay don the house constantly in the 90s like every other
Starting point is 00:05:11 house yeah um but we've since grown out of that yes um but no i uh i studied abroad in college I went to school at the University of Tennessee, and I studied a summer in Greece and kind of traveled around through Italy afterward and just kind of a whole summer inundated in that old, yeah, that old European environment. And in a weird way, it just obviously I was young and I liked the drinking part, which we all do. But I've always loved school and I'm just an admitted brainiac nerd. I just love to learn anything, which is why I love podcasts. So I'm so excited to be on this. And hopefully, y'all learned something. Oh, I will.
Starting point is 00:05:47 um today but anyway i just i fell in love with it there and then moved to austin texas after school okay and uh just to live somewhere else it's young fun food city um so i just got a gig bartending for a little cash and it happened to be a restaurant with a heavy wine program yeah and so i just started helping the somelier there i said hey look i'll help you he was preparing for an exam at that point yeah and i said hey i'll help you study or put wine away or whatever if i can like do the tastings with you and i just started learning yeah um yeah and just kind of never stopped. Yeah, because I feel like sometimes if you enjoy something and then you learn more and more about it, you start to appreciate it more and more. Like, that's how I've been with wine, even though I'm like not on your level by any means, but just it was like, I don't drink it
Starting point is 00:06:31 just to like feel drunk. Right. I actually like enjoy it. I enjoy it. I enjoy it with certain foods. Absolutely. Um, I find that it's like having a glass of wine and cooking. Oh my gosh. It's like my favorite thing in the world. It's like the most fundamental partnership. Yes. Exactly. I don't understand how people can do like Sean doesn't I actually should have Sean in here learning about the wine so he can appreciate it because my goal in life is to get Sean to appreciate wine yeah because he drank it with me on the show uh-huh just to get in my good books right and I was like nice man yeah well it's super smart but then I'm like wait you don't drink wine no like he really doesn't it's like wow you really love me but like also you've pulled a blindfold over my eyes
Starting point is 00:07:10 false advertisement yeah exactly I don't know how to deal with this yeah that's funny because anytime he's cooking or doing what I'm like don't you just want a glass of wine he's like no not at all he likes a tasty beer yeah sure but he doesn't I just don't think he's drank enough wine to appreciate it and I didn't love wine the first like I just it was in my mom's house yeah so I started drinking it it was in the cabinet I could reach it is terrible but I really like the idea of drinking wine yeah and now I'm like how did I ever not like it well I always I say I mean like I love whiskey I love a good cocktail um a corona if it's hot but like I what part of the part of of what made me fall in love with wine and why I think it's kind of this like incredibly challenging
Starting point is 00:07:49 and delicious rabbit hole that you can go down is that it is ever changing and you're always learning and it's not just you know a Corona on hot day that's always going to be the same which is great consistent refreshing yeah but it's like a challenge and it is ever evolving so anyone who you know has a sort of heightened interest in anything so like my dad's a huge car guy right like I don't really care what I'm driving I want to get from A to B I want my air conditioning to work and I want a good stereo okay fine yeah but you know he knows every in and out of it and when you've taken it apart and put the motor back together it's just you know it's this more holistic sort of respect and appreciation even if you know the it's not the most high end car it's
Starting point is 00:08:28 something that he knows intimately and in a way I mean anybody who really likes to learn and break down and put back together anything is you know you can access wine that way and really gain an appreciation even if you don't love the taste of all the wines if that makes Yeah, no, that makes sense. Also, could your dad hook me up with, like, finding a 76 Bronco light blue? Probably. He has a Bronco. I'm so embarrassed.
Starting point is 00:08:51 I hope he doesn't hear this. It's either yellow or blue currently. Oh. They rotate. Really? It's like a merry-go round of cars. Yeah. Oh, that's so fun.
Starting point is 00:08:58 I honestly just all of a sudden have this urge to get a light blue 76 Bronco. Yeah. I just think they're so gangster. They're pretty cool. And I saw Lady Gaga driving one, too, and she looked so badass. Oh, yeah. I was like, man, I love that car. No, I want one. Anyways, just something to think about it when you go, I'm done you're dead.

Starting point is 00:10:30 Awesome. Unless you have anything more to say before we get going. I think it'll just come naturally. Yeah, because you work at salt and vine. Yeah. So I own a restaurant. and bottle shop retail shop in West Nashville and Charlotte Avenue
Starting point is 00:10:43 So we own it Yeah Oh dang girl We celebrate two years in July Amazing So it's been a crazy two years I feel like I have like This toddler that like is not actually my child
Starting point is 00:10:54 That consumes all my time Yes But yeah we're over there So we focus on And it's kind of what I've come with today Is value value value right I mean I always tell people An expensive wine is always going to taste good
Starting point is 00:11:06 Yeah But a value wine that tastes great that's the one I want because at the end of the day I can buy six of them for the price of one other one and I can share them with people and not feel like oh well they're not going to appreciate it and I've wasted my money and at the end of the day it's an everyday grocery product really in Europe
Starting point is 00:11:23 and that was kind of what piqued my interest and you hate to say that because there's this glamour about wine you know you don't want to call it a grocery but it's on their tea every day like sweet tea is on our tables here in the South and that's just part of their life so all that to say we focus a lot on value unique varieties I do use a lot European wine just because, as you said, being food-friendly is so important if you are a person
Starting point is 00:11:44 that likes to cook with wine or pair your wine. So we've got a couple little reds here, one from Italy, one from Spain. And then we have a white wine from Austria. So I tried to kind of go outside the box so we could find some new. See, I always go inside the box with wine. Like, I'm like, oh, cool, a cab from California, please. But don't you just love the European lifestyle? It's fantastic. Like, they just know what's up. I love. I love. lived in Europe for seven months. Oh, amazing. And I remember going to the gym one morning.
Starting point is 00:12:14 It was like 7 a.m. And I had my to-go coffee mug. And I get in the elevator and the guy's like, beer. And I'm like, no. You're like, it's coffee. Not yet. And he was just like, oh. Like he just assumed, you know.
Starting point is 00:12:29 But everybody, nobody is out there getting wasted or like taking advantage of alcohol. They all just appreciate it. And it's like the best. Like you just go out on. like we're doing Monday morning, a lemon, and you know, they just have their wine
Starting point is 00:12:43 with breakfast or a little like mimosa or whatever, lunch. Everything. Yeah. Like I said, it's part of their lifestyle, which is fun.
Starting point is 00:12:51 Yeah, it really is. And that's why I feel like I'm supposed to be European. Should we practice accents? Also better after wine. Are you good at accents? No,
Starting point is 00:12:59 not necessarily. I like to think I am. Wait, where are you from? I'm from here. You are? Because you don't really have. Yeah,
Starting point is 00:13:06 I lived in Austin, and then I worked in Napa for a while, so I think the first, the other west I got, the more they leached out my accent. Yes. It's actually a goal of mine to try to bring it back. You should. Oh my God.
Starting point is 00:13:15 I tried to wean out my Canadian accent, but now I'm like, why would I do that? I know. But it's because I really want a southern accent. Right. I really want that. Like, so I'm like, maybe if I live here long enough. Oh, yeah. It will definitely.
Starting point is 00:13:26 It will start to come. But nobody in Nashville anymore is from Nashville. No. We're a rare breed, I guess. Yeah. You really are. Yeah. Okay.
Starting point is 00:13:34 Coming again, what this is? Cool. So we're going to jump into Austria. So a lot of folks, like we think about Europe, right? We think France, Italy, Germany, that's kind of as far as our minds go wine-wise. But almost all countries in Europe make wine. It's a perfect climate for it. And Austria, they do a little bit of dry rezzling.
Starting point is 00:13:51 Everyone's scared of reeling. They do dry reeling. But their all-star grape is this grape called Gruner, Veltliner. So crazy to pronounce a lot of people just say gruner. I do that because my German is not good. Oh, that's where I lived and my German is not good. Oh, yeah. It's a whole different.
Starting point is 00:14:08 I don't even try. You said Austria, right? Austria. Yeah. Mm-hmm. So, yeah, this is a perfect summer white for me. That's why I brought it. Like the temperatures jumped up to 90.
Starting point is 00:14:18 The humidity is becoming unbearable, right? So this is a perfect wine. I say for anybody who wants something crisp, Sauvian Blanc drinkers, it's got a lot of similarities to that, bone dry. And it's cool because it's great with greens. So, you know, it's summertime. We're trying beach bods, eat healthy vegetables. And unfortunately, vegetables don't often make wine.
Starting point is 00:14:42 It doesn't improve the taste of the wine. It sometimes makes them taste bitter. So you have to have one that is super high in acidity, which this is, meaning the freshness, the dryness. And this one honestly has a sort of like green peppery sort of vibe, not in a weird way, but it's just super complimentary to vegetables. Okay. I'm not going to, I can't remember where I was, but they said green pepper in the white wine. And I was like, that's weird. And I drank it.
Starting point is 00:15:06 And I really tasted. And it was one of my favorite whites I've ever had. Uh-huh. So this one's not sweet. Not sweet. Or what do they call it? Um, off dry. Maybe it's off dry. But wine, like you're not supposed to call it sweet or not sweet. Right. Yeah. Well, I actually, I'm glad you said that. And that's part of, please, please. That's part of why I brought two different reds to kind of taste together. Yeah, the, I think the most commonly misused words in describing wine, um, is, is sweet and dry. Yeah. 99% of the table wines, the regular non-sparkling non-desert wines that you find are dry. Yeah. There's not any sugar put in there. There might be the tiniest hint of residual grape sugar, but, you know, we can't perceive that up to about six grams per liter. So, so this is a bone dry wine, excuse me. One little tip to be able to tell. Oh, it's so good.
Starting point is 00:15:55 If you look on the labels, legally to be sold in the U.S., even if it's an imported product, they have to list the alcohol percentage, right? Yeah. So wines generally between 11 and 15% alcohol will be dry. If you dip below 11, you're probably going to have a little bit of sugar, be off-dry. Not like a dessert wine, but like slightly sweet. That is what I was at the end of the word. Yeah. That is the correct term.
Starting point is 00:16:17 Okay. So, no, this is a bone dry white. I really, really like it. It's definitely at my alley for a white. Zippy. It's just like zinny. Fresh. Yeah.
Starting point is 00:16:29 It's very fresh. I'm like, sometimes I laugh at people like obviously in the wine world who are like, oh, yes, definitely getting a hint of like boot. old man boot yeah old man boot like they come up with the weirdest things to describe five day old cherry pie yeah what's the weirdest weirdest weirdest term you've heard to describe wine ah that is so difficult and of course now i can't think of it i always laugh speaking of reasoning i always laugh because if you get them from australia they smell like a pool toy oh so i always call it the bar it's like my barby house like that's funny do i want barby house wine today smells like plastic a little
Starting point is 00:17:03 bit of lime a like so yeah does your husband um does he appreciate wine and he does he's such a champ we he is an attorney and we got engaged um right after he passed the bar exam he was waiting to get his results or took the bar exam yeah so he was he was just he jumped right in he took all my books and studied and i mean he knows yeah he was like i've been studying my whole life might as well study wine since you do it for a living oh that hey that's yeah pretty romantic yeah good dude yeah it was pretty sexy i was like you look great with a wine book in front of you yeah that is sexy Don't get me wrong, the man drinks course like, but he also appreciates a spectacular champagne. That's really funny.
Starting point is 00:17:40 Yeah, we, I feel like between the two of us and maybe we should go on a double date. Yes. And then get Sean into some wine. Oh, Ben could totally do it. Really? Because he's not like, you don't look at him and think, mm, wine guy. Did you say Ben? Mm-hmm.
Starting point is 00:17:52 Ben. Yeah. Okay, now that sounds like you're saying Ben with an Australian accent. Oh. Ben. Yeah. For a second, I was like, was that an Australian accent? And she said, Ben, Ben's a cool name.
Starting point is 00:18:03 Yeah. It's actually his real name's Benton, like the bacon, which I think is so cool. That's pretty sexy too. That's pretty awesome. That's funny. Yeah. How is, is other people name that or is that just? Um, his family. It's a family name. I love, love unique names. And I love one. And I love it. Because everybody's like, oh, Benjamin. And I'm like, no, Benton. Like the best bacon in the world. Yeah. I love that. It's pretty cool. I'm like, this is where my head goes. I'm like, oh, baby names got to write that one down. I have it. Do you have a list? in your phone a baby name? No, because I feel like that will will it into the world before I'm ready. Okay. I have a mental list. Oh, you're that's smart. Yeah. I'm going to go delete mine. Didn't mean to scare you there. I'm like, wait. Am I like putting it out to the universe? Just keep drinking the wine. Yeah. Yeah, exactly. That makes it all better. That's true. I had a very unfortunate, um, snowboard accident in Austria. Ooh. I'll probably never snowboard again because of it. I can't say that I'm a snowboarder. I grew up here on the lake, so I definitely can wakeboard. But, The fall is not quite as hard.
Starting point is 00:19:05 I suck at wakeboarding. Yeah. They're totally opposite. Yeah. I can do wake surfing. Yeah. Much easier. Because my whole problem with wakeboarding is I just can't get myself up and out of the water.
Starting point is 00:19:16 Where wake surfing, I can just stand there and then go. I learned. Actually, I just learned last summer. And I was like, oh, I can get down with this. I feel like snowboarding helped that. But yeah, I was just, I took like the nastiest spill. I went down. I, like, tried to convince myself I was really good and I'm not.
Starting point is 00:19:32 And I went down like a nar. gnarly, am I allowed to say that? Yeah, gnarly. Oh, gnarly! God, I don't know if I've ever used the word gnarly in my whole career, and now I'm saying. And now we're in California. Narlely. I went down to nasty hill that I shouldn't have gone down, and I just bailed.
Starting point is 00:19:49 Yeah. Like, I was tumbling, and then my, when I landed, I landed all my chest and my legs came up over, like, my snap my back, and my legs came up over my head. Oh, my God. Yeah, it was terrible. But you're walking now, so it seems well. Now I appreciate Austrian wine. Yes, exactly.
Starting point is 00:20:06 So I'm not mad at Austria anymore. I was like, I'm never by that. Austria, you're forgiven. Yeah, you got me with your reasoning. Yeah, so I definitely encourage people. I mean, when you go to a wine shop, just ask if they have Austrian wine, they'll have Gruner. Like, that's their number one thing.
Starting point is 00:20:20 It is to Austria like Cabist, California. Really? Yeah. Okay. Inexensive, super fresh. Great for summer. I find it really hard to listen back to my own podcast because I'm just like my own worst critic and I always think like, oh, this is one I will listen back. Good. Yeah. I'm going to make
Starting point is 00:20:35 notes. I'm going to make Sean listen to it. Mark out the baby names. Make wine notes. Yes, exactly. I'm going to delete the baby names and I'm pretty sure I have wine notes in my phone somewhere too. Actually, I was looking through my notes the other day and it's pretty embarrassed. That should be a segment on my podcast. Right. Embarrassing notes. Yeah. From my iPhone. Like, I'll like, I have one that just says funny and it's just like things to drop in a conversation that would be really funny like I love that you're prepared though and you're harnessing these brilliant thoughts yeah because if I write it down then I remember it and then if I don't the next day I'm like why didn't I write that down I can't remember it scares me how
Starting point is 00:21:10 much um or how terrible my short term memory is it definitely is starting to decrease I'm like the closer I get to 30 I'm like I knew nothing oh what has happened I used to be so intelligent oh see I actually feel like I'm getting smarter with age but memory is going right yeah Yeah. Does that make sense? Yeah. Yeah. Anyways, I love this wine. Super cool. And that's one of my biggest sort of campaigns and my whole staff will tell you this proudly. Many come in, you know, I think I love a red wine. I had the most beautiful light, super chilled last night on the porch with a burger, like great. But my sort of goal in campaign was salt and vine and as a wine professional is to get people to not fear white wine. Like there is this assumption that it's either a
Starting point is 00:21:54 butter bomb chardonnay or it's sweet. And the truth is most white wines are dry. And, and they are more versatile with food than anything. And so I just, there's a lot more complexity in them than people kind of just lump it into this one category like Rose. Yeah. But I would definitely encourage people to explore them. And like I said, check that, that alcohol percentage.
Starting point is 00:22:13 If it's above 12, it's dry. Yeah. Hands down, no questions. I would have never known that. Yeah. Yeah. 11 could be one way or the other, but if it's 12 or above, it's dry. Yes, like 12 and a half here.

Starting point is 00:24:04 Now back to Off the Vine Grape Therapy. Should we jump into the Reds? Yeah, cool. Let's do it. Do you always laugh when like you watch people at restaurants, you know, and they're like, do you want to taste the wine? And the people don't know what they're doing, but they're swirling and they're smelling and they're just like, this is what I'm supposed to do.
Starting point is 00:24:22 I'm glad you asked that because there's this huge fear, I think, of people going in and like needing to know enough or like they just do default to the one they know because they don't want to be embarrassed. Right. If you're somewhere, especially if they have like an interesting wine program, there's someone there that knows what the hell's going on. And they probably would love to talk you about it. That's the reason I'm here.
Starting point is 00:24:40 I love to talk about this. Number one, I'm drinking wine with you and I'm not at my office. But I love to talk about wine. And it is ever evolving. And so, you know, those lists are always changing. Someone will be excited to help you. And they will not be like, oh, this idiot knows nothing. Right.
Starting point is 00:24:54 You know, they'll be excited to share something. Yeah. because in a way it's part of why I fell in love of it and why you know it it rings true to my heart having grown up in a musical family right is like the wine is art yeah it really is like they're all different and some whoever made this is trying to show you something that the guy down the road from him didn't want to show yeah so it's cool to find the difference anyway so I've poured you both wines together okay my number one rule with tasting wine is if you have one glass you're probably drinking if you have two glasses you can really taste and learn
Starting point is 00:25:25 so it's comparative yeah so um while people are scared of sweetness and white wine there is um kind of two fundamental camps i try to tell people figure out what camp you live in for red and then you can explore all the different varieties or um styles that kind of fall within either a fruity category again not sweet but fruity right um or a more savory earthy category yeah um so i'm trying to remember which one and it's always keep the wines in order that's the hard part um so So your first wine here, on your left, this is from the island of Candonia, or excuse me, the island of Sardinia, which is, of course, right off the coast of Italy. So when we look at island wines, whether it be Sardinia, Portugal, any of the Iberian wines from Portugal or Spain, you're going to get a lot of ripeness. So you think about it's Mediterranean, it's dry, it's in the middle of the ocean.
Starting point is 00:26:21 It's a lot like California and climate. So you're going to get more of that fruity, juicy, full-body, easy drinking sort of style. So this one is called Canaanau is the grape, but it's just their local terminology for a French grape called Grenache. Yeah. So if you drink Southern French wine, Southern French red, Coat d'Rone is like a very, yes, broad category of table wine, right? It's primarily granage. So this is the same grate. It's just been picked up, put on an island off the coast of Italy.
Starting point is 00:26:49 So you're kind of amping up that strawberry. I always think of like twizzling. You know, it's got like a touch of that kind of spicy anise thing. But, yeah, it's just like, it's going back to childhood and drinking, you know, eating a fruit roll-up. Yeah. Oh, I love fruit rolls. Yeah. Oh.
Starting point is 00:27:06 Now, so what are you supposed to do? So you're supposed to swirl and smell? So does it depend on the wine? No, the swirling, honestly, is really just to kind of wake the wine up. Okay. In the bottle, you know, it's ever changing. It's ever evolving. That's what's cool about wine.
Starting point is 00:27:21 But it needs air. Air basically activates it. Is that, and is that true for, um, Pinot Noirs? Mm-hmm. It is. Every wine, what's going to bring out the flavors, what's going to break down the structure and, and allow it to kind of open up, um, is air. So oxygen releases all of the aromas and the flavors and it actually softens the
Starting point is 00:27:41 texture of the wine, too. If it's a super dry wine, it'll make it a little smoother. Just give it a little swirl. Give it a little squirrel. Yeah. I like it. And what was I just going to, oh, now, okay, you, you said Twizzlers. I just took a sip of that.
Starting point is 00:27:52 I'm like, I taste Twizzlers, but I feel like, this is how my mind works you could have told me like yeah black liquor and I would be like yep totally taste it's true there's a lot of power of suggestion and it's personal you know like if you didn't eat strawberry fruit rollups growing up this probably not what you're going to smell that's why I always I love the descriptors and it's funny you ask like my my Barbie pool toy I can't speak either wine's kicking it's Monday morning that's why I blame it on as all those things are cool and they help you sort of differentiate and like make it personal but I always tell people find like find the texture of the of the wine that you like because telling somebody if you go
Starting point is 00:28:28 in a story you're like oh i like black cherry and licorish flavored wine they're like what yeah but if you're like hey i like a light body like a lighter wine that's very fruit forward then they know what that is so like find the texture that you like find the sort of experience do you like big bold in your face you need a steak or it's going to rip your tongue off or do you like really delicate and it kind of dances across your palate you know i like that yeah i i used to like the really bold lines and I used to love eating steak now I eat it once in a while
Starting point is 00:28:56 but now I really like a lighter red which is so crazy because I used to stay so far away from them right so it's that's weird that you also change what you like but that's what I mean when you're saying like it's evolving and and
Starting point is 00:29:10 like a corona is always a corona right which is there's a there's a pro and con yeah exactly it's consistent yeah that's always the same but yeah this Gernage Pinot Noir There's a little grape called Game that they make in France, Beaujolet, and they're perfect summer wrettes.
Starting point is 00:29:27 I mean, and you can put a little chill on them, and they drank almost like a slightly sturdier rosé. Oh, I have a question for you. I just thought of this, because I, Sean got me a wine fridge for Christmas. And what temperature am I supposed to keep reds? So, honestly, we drink reds. And white actually. Way too warm because room temperature now is like, what, 70 degrees maybe? you think about quote unquote room temp you know in these cellars in France and Italy they're
Starting point is 00:29:54 underground that room temp is about 65 right so I have one um that's actually like the dual temperature so whites I mean if you're going to store any wine just to preserve it um because heat heat and temperature fluctuation is really the the biggest factor that will break down or compromise or ruin a wine right um 60 to 65 you're going to be super solid if you want to store whites are sparkling to just pull them out and drink them right away, I would store it like 50, 4850. I don't even know what mine's on right now, but I feel like it's around that. 52 to 58 is like solid for all wine. Okay. Good to know. Yeah. Good to know. Okay. What's this one now? So this one, we're going to hop to Spain. So if that granage sort of represents the fruity or
Starting point is 00:30:41 juicier, more easy drinking style red, we're going to jump to one that I think is the most perfect red wine for all red wine drinkers okay it's not fancy i always call it like the girl next door like you're not super involved with her like she's not the sexiest girl but she's always there consistent she's always cute yeah yeah it works any day of the week so um this is called temperino temprenio oh i suck it so english but um it is the primary red grape of spain so this is grown in rioha is the oldest sort of wine appellation there north of madrid and uh they had a little time in the 1800s where the French lost a lot of their vines. And so they came down in Spain and we're basically like, hey, dude, we got to make wine, but we don't have any vines.
Starting point is 00:31:27 Like, can we just, can we hang here for a little bit? And so from them, they learned the very intricate use of French oak barrels. So like, when you go to Napa, you go to Sonoma, you tour, they've got the big barrel sellers. And those are for fuller-bodied red wines, typically like Cabernet. And the reason they do that is to soften the tannin or what makes it super dry. So, the Spanish were growing this local grape, Temprenio, which like I said is kind of a neutral, easy drinking, fruity red wine. And then the French came in and they were like, hey, we could use these barrels and make like a really tasty, serious red wine out of this Temprenio grape if we just use these barrels. Yeah. So that's what they do. So now it's because of that,
Starting point is 00:32:06 it has this sort of lightness and accessibility that European wine has, but it also has that a bit more of the structure and that sort of spice. I always call the oak is like the, the winemaker spice rack like you can put a little cinnamon a little clove a little vanilla um so this is a little fuller and it kind of shows the difference between a clean uh fruit driven sort of red wine and then a bit bolder um oaked fuller-bodied red yeah that smells really good yeah it oak just it increases the texture the body the flavor oh i like that mm-hmm beautiful it's a perfect bridge between California and in european style oh yeah oh that's very good I have a question.
Starting point is 00:32:48 This is a stupid question, but whatever. How do you not get wine lips? Oh, you know what? I get one wing, okay? This is weird, but I only get one wine wing just on the right side of my lip, the left side. I guess I just, I don't know, tend to sip that side or something. You like tilt your head when you do. I guess, I guess.
Starting point is 00:33:05 Is there any way you to avoid that? To avoid it, not really, but my trick for if you have a couple glasses of, you know, a really dark red wine and you start to get the teeth in the lips. You can brush them, but the best thing to get it off is just to, like, totally aggressively swish white wine. Oh, that's a great way of doing it. Yeah, it is. I mean, the white wine, the acidity in it, and sort of the types of acids that are in it break down that color and that pigment quicker than, like, water or toothpaste. Oh, that's funny. Yeah.
Starting point is 00:33:35 Oh, wow. Uh-huh. That's what they say if you spill red wine to pour a white wine on it to get it out because of the acidity. Mm-hmm. Oh, it's true. It's true. It's true. Oh, that's cool.
Starting point is 00:33:46 Okay. Well, then that just gives me an excuse. So when I drink a glass of red, I have to have a glass of white on the side. Absolutely. Yeah. It's just how it works. We have to do the embarrassing swish, like really aggressive, like mouthwash. So don't drink red wine out of a straw. That doesn't help anything. Probably not. Well, I'm like, is it like a rookie move to have wine lips? No, I mean, it's inevitable. I mean, if you're drinking. See, I feel like I've kind of mastered it. Like, if I'm drinking, like, I feel like after every sip, I'm like aggressively wiping my lips and teeth, like just. That truly is the most effective way that I've found, and it's not just another excuse to have another glass of wine. No.
Starting point is 00:34:22 It actually works. Yeah, it's science. It's science. Yeah, that's just how it works. I thought after getting a Jeep, I was done with car shopping, but I'm not. Okay, that's a super amazing. Yeah, it was really special. Did your dad sing at your wedding? He said he would not.
Starting point is 00:36:02 Oh, okay. Mm-hmm. Did you have some? No. No, I said, however you feel about it. He did, um, write our first dance song, which was amazing. No. So special.
Starting point is 00:36:11 Yeah. Oh, that is so. That makes me want to cry and I don't know. I know. Oh, I made him. I said, I'm going to listen at least 20 times before we dance, so I'm not bawling. I'm like making myself numb to it. Yeah.
Starting point is 00:36:21 Yeah. No, it was super special. That is very special. Yeah. Oh, that's so sweet. My dad is such a big fan of your dad. He was like, Alan Jackson's daughter's coming up. Oh, my God.
Starting point is 00:36:31 So cute. Do you hate when people use the term cheap? I mean, is it inexpensive? We, as professionals, we use inexpensive. Yeah. The bottom line is, if it is a cheaper wine, it just has an implication. that it's not as good. Yeah.
Starting point is 00:36:48 You know, like the Semperneo is $15. Like, if you buy a $15. What, wait, which one is? Cabernet. Oh, this one? The Tampanio, the Ryoha. Mm-hmm. The Spanish.
Starting point is 00:36:56 But it's great wine. It's amazing. And it drinks like a... It drinks like a $25 or $30, you know, domestic bottle just because it's inexpensive for them to make there. Okay. Say that one again so people can write it down. Rioja.
Starting point is 00:37:08 R-I-O-J-A. Okay. And they're all over. There's so many different styles. Oh, really? Mm-hmm. Yeah, that one is. I mean, that's delicious.
Starting point is 00:37:16 Yeah, that's very classic. So I'm going to rephrase this. Natalie Melanson says, best inexpensive wine you've ever come across. Ooh. Um, this is definitely up there, Rioja.
Starting point is 00:37:30 There's a French, uh, there's a French white wine. It's kind of similar to this greener, Veltner, um, called Muscaday. And it's,
Starting point is 00:37:37 I oddly enough, I call it my Corona wine. It's like taste, it's on the, the Atlantic coast of France and it's light, low alcohol and expensive. always. Yeah. And it's got this like limy and kind of almost briny, salty, beechy thing to it. And it's like, okay, this is like the wine version of Corona. And I'm not going to lie, I put it in my
Starting point is 00:37:55 margarita sometimes. What? Yes. No. Muscaday margarita. Check it out. Okay, I'm going to. Going to write that one down too. And that's M-U-S-C-A-D-E-T. That's amazing. Wow, balzy. Mm-hmm. That Tara girl could be Tara. Is it true that I'm going to rephrase it again. Is it true that you can make inexpensive wine better just by putting it through a decanter? Not necessarily. There's really two reasons to decant wine. One is that it's an old wine and there's actually sediment. Like it started to break down.
Starting point is 00:38:32 So basically to filter it. And the second is if you have a very, very full-bodied, very dry, tanic wine. Like we talked about, the air is what makes that smoother and breaks it down. There's not really any benefit to decanting. inexpensive wine because in all reality that wine is supposed to probably just be drunk young so it's fresh enough that you should just be able to pop pop it and go okay cool i feel like this is very helpful even for me uh rachel stegman says what do you have to do to become a however tucker hi bubby Tucker wants to be a similar yeah we just let him let him he can hang um yeah
Starting point is 00:39:12 Tucker. Oh, God, I can't imagine this guy on whiny, buddy. I strong. Yeah, what is the process like to become a, however you say it. Oh, you got to get it, right? Okay, tell me again. Somalier. Oh, some all he. Yay. Oh, I thought you said it so differently the other time. Somalier. Oh, Somalier. Yeah, nailed it. Okay. Nailed it. Yeah. What's the process like? So there's, it's a tricky thing because there are certifications for it, just like you would get certified to go through as a real estate broker or anything like that it doesn't mean that you can't be a wine professional or run a wine program or anything but it's it's really just an accreditation um i did it because like i said i'm a self-admitted nerd and i wanted to learn as much as i could
Starting point is 00:39:57 um but it's a group called the court of master silhouilliers and it's it's an international program and in school of study so there's no like physically you don't like go to university you just you sign up and you um prepare for an exam date and then you take those exams and there's four levels of them um and you go as far as you want to push yourself how much do you have to drink to or do they do you like spit it out you'd spit it out yeah otherwise you're failing everything yeah then there's only you know there's there's anywhere from two to six wines that you're tasting on an exam and so it's a tasting portion always there's a written exam that's like 50 to 100 questions.
Starting point is 00:40:38 And then for the court of master solomiers, because it's restaurant-based, there's a service portion. So you have to do like a formal champagne service. Okay. Yeah. Should I do it? So what's cool about this program is they have an introductory level. So there's four levels.
Starting point is 00:40:54 The second level is what makes you, quote unquote, certified Solmieri. So then you have that title. And then there's advanced and master in those are just extraordinarily difficult. Yeah. The entry one, I would encourage anyone who. is a wine drink or a wine enthusiast if you really
Starting point is 00:41:09 just kind of want to like get your feet wet in the entire world of wine the introductory course is a two-day actual course so you do go through and it's an eight-hour thing and they go through
Starting point is 00:41:19 every wine producing country in the world and there's a tasting portion but you're not tested on it so it's kind of like you're led by the best Somaliers in the world and they teach you
Starting point is 00:41:29 what you're getting when you're swirling how to taste what the structure is and it's very it's very involved but you know you're not really doing it as a professional sort of step but you can definitely get tons of information about the whole world of wine yeah yeah have you seen the movie um what's that movie that
Starting point is 00:41:47 the song movie no um what's that wine movie that um sideways yes yes did you like that movie i love all wine movie yeah because is it kind of like a mockumentary is that what it is or i haven't seen um you know it's or is it like being funny or is it like being funny it is it's being funny and it is sort of mocking serious wine snob people because that's who he is in the movie yes um but i think it brings a lot of good light to um to the california wine industry yeah but um it's an entertaining it's actually a very very good like film like the movie's good yeah i've heard so many people talking about it but it's definitely worth a watch um i'm trying to google right now i always end my podcast with a joke and i'm like i want to find a good wine joke i I should have a horrible at jokes. Really? I'm usually really good, but wine jokes. This is, I'm spoiling my secrets right now.
Starting point is 00:42:46 I'm not a good joke teller. I just Google. People are still laughing. It doesn't matter. Okay, I have one. What is a woman's idea of a balanced diet? Grapes. Good guess.
Starting point is 00:42:58 Great guess. A glass of wine in each hand. Oh, yes. You know what's fun about being sober? Nothing. Right? exactly right um these are so stupid what's what's a woman's idea of a romantic night this is the worst joke i've ever heard Netflix and chilled wine oh it's sad how many of my nights are like
Starting point is 00:43:23 that well yeah that's my every very accurate yeah that's not even funny that's just accurate yeah that's good okay so where can people um on your um is there instagram for salt and vine right yes so um on that what what uh what kind of stuff do you guys do on your instagram page honestly it's uh just a lot of updates of what we have going on at the restaurant um tastings we have dinners we have menu changes stuff like that yeah tell us about the place yeah so salt and mine it's like i said we're celebrating two years and it's a full lunch and dinner restaurant yeah um wine focus we like it to be really casual it's a fun open white with little bright yellow accent space super airy um and we want wine to be fun and casual and then
Starting point is 00:44:04 do what we did and people not have to feel like intimidated or like there's a pretension behind it. So that's great. We just have fun. Very inviting. Yeah. We taste a lot. I love that. Yeah. And so yeah. So do you guys do tastings there? We do. Cool. And we have a bottle shop, which is very small, but we have mostly wine, a little beer. Oh, that's cool. And we have like super casual tastings for anybody in the store. Thursdays and Fridays. Yeah. People always either tweet me or email me asking what to do in Nashville. So yeah, there you go. Come on by. Do you ever go to the Arrington Vineyards. I love Arrington. Isn't it beautiful? It's just such a beautiful property. It really is. It's fun. And they should be doing their music series now. I mean, they do it all summer. They always have bands and stuff.
Starting point is 00:44:45 Really? Yeah. Oh, because my parents are in town right now. And so I was saying they don't drink wine either. But I'm like, even for people who don't drink wine, it's just so beautiful out there. I'm pretty sure they have music in the summer. Like every night? At least weekends. I would look into it though. I'm going to look into it. It gets busy. Damn it, it's Monday. They leave on Wednesday. It may be open now. We're going to top golf tonight. Oh, yeah. That'll be fun. Yeah. I did the grand opening, the VIP. I was interviewing people for that.
Starting point is 00:45:14 I interviewed Kid Rock. He wasn't very nice to me. He was just like, who is this chick wanting to drink my whiskey? And I go to, okay, do you ever do, do you ever shoot whiskey or do you just sip it? Both. Yeah, me too. Okay, me too. Yeah.
Starting point is 00:45:30 And so I said to Kid Rock, I was like, I think I've told this on. a podcast before but I'm telling you um I was like oh I've heard your big whiskey guy like I'm like you want to do a shot and he's like he looked at me like I was crazy and he goes you don't shoot whiskey you sip it and I was like oh yeah just kidding I feel positive you could probably file back through some of his songs and find proof otherwise thank you I was like there's no way that kid rock yeah does not shoot whiskey has never taken a shot of whiskey yeah that's a bold face lie yeah um what's his real name I can't remember I never remember this I can't remember I called them kid once and I was like Caitlin just get out of here
Starting point is 00:46:07 just let yourself out actually I felt embarrassed but thank you so much for coming to my home oh gosh yeah and teaching me about wine and that's my new favorite hang on to it really a rough Monday I can hang on to it hang on to it I will not only hang on to it I will drink it there you go I'll drink it yeah I think we're gonna go later um downtown and listen into some music.
