This is a 10-round quiz show with questions from Meat Eater's four verticals, which are hunting, fishing, conservation, and cooking, and there is a prize. Starting point is 00:02:23 I've played a little bit. I feel like I'm better off getting blackjack than winning this, for sure. Well, yeah, I mean, that's just luck, right? But I do like NBA games that go into overtime. It's almost the exact same percent of those going to overtime as it is a perfect game happening here. And I think we should just put it out there that if you want to buy these for your hunting buddy or partner for Christmas, you shouldn't wait until the week before christmas because sold out last probably sell out we have some housekeeping to get to in a previous episode of trivia we had a question where the correct answer was tilapia steve argued that i'd also need to accept the answer perch because the nile perch is a type of tilapia but
Starting point is 00:04:03 about a dozen listeners wrote in saying, I was right for not awarding a point for the answer perch. There is a fish called the Nile tilapia, but that's a separate species from the Nile perch. They are a totally different genus, family, and order. One is a small fish that's often used for bait, while the other is a sport fish that grows to be hundreds of pounds. So if you answered perch for that question, it's still incorrect.
Starting point is 00:04:29 The only right answer is tilapia. I remember when Larry Dahlberg went over there and caught some of those fish. What was his show called? Monster Fish? Something like that? Oh, man. I don't know if I remember. No, that's the one with Jeremy.

Mirepoix is a French flavor base that usually consists of two parts onion, one part celery, and one part carrot. This combination is popular in broth recipes, roast recipes, and stew recipes. My favorite mirepoix dish is Danielle Pruitt's turkey and wild rice soup, a recipe you can get on TheMeatEater.com. Is that the Holy Trinity they call it in the South?
Starting point is 00:12:23 No, that is a pepper instead of what, celery they throw out? I think instead of the celery they put in a green pepper. That's right. Starting point is 00:34:33 Most of you got that right. Is that a pallid sturgeon? I'll tell you in a second. That is a sturdlefish. It's a cross between a Russian sturgeon and American paddlefish. It was created in a lab by biologists who were using treated paddlefish sperm to coax sturgeon eggs into development, a type of asexual reproduction known as gyneogenesis. Instead, they got this frankenfish, which is one part paddlefish and two part sturgeon. About 100 sturdlefish remain, which will live out their days being studied
Starting point is 00:35:08 at that hungry facility. And if you're listening to this and you don't have the visual cue, it looks just like you'd expect it to look. One part paddlefish, two parts sturgeon. I didn't even think paddlefish. I knew that because you're paddlefish.

Although the region is often referred to as the Ozark Mountains, it's actually more of a plateau.

Starting point is 00:42:54 but is largely restricted to a specific turtle, which is the diamondback terrapin. Diamondback terrapins live in coastal marshes from New England to the Gulf of Mexico. Terrapins used to be a common menu item but fell out of favor among Americans when populations started to decline in the 1930s.
