Food storage, a huge one for me.
This one, I have noticed the effect.
I have definitely noticed the effect.

Even though the Titan is such an awesome unit, it's not one of those serious anxiety.
Now, I don't have the hugest solar array, so that could be why, too.
But it doesn't do the same thing that food storage does. It doesn't do the same thing that the guard, like

And because the rain hasn't stopped, many farmers have been unable to get crops such as potatoes, carrots, and wheat into the ground.
One threat, one solution, you know.
Potatoes, the planting season is essential.
We were worried about the wheat crop in Ukraine.
We were worried about the price of wheat and that kind of thing because of being a struggle to get into the ground there.
Now we're seeing similar concerns in the UK.
This is all about adaptability, folks.
You know, this is about how you look at at your food like how do you look at food
is food a thing that comes exclusively from the supermarket
it's a question is food a thing that comes exclusively from your backyard
now a couple months ago we did a master class called Build Your Food Security Network. And I've got to get that up so you guys who aren't members can take that course.

How to build a food security network is,
I think it was something like 18 different ways to bring food into your home.
That's what you want.
That's exactly what you want.
You want to have as many means of food as possible.
It's not just about a garden, a pantry, and long-term food storage.
You can focus.
You don't even have to focus much of your time and energy you can focus
your time and energy and and at least take food off the concern at least be able to say you know
in most cases particularly like uncharacteristic rainfall we're going to eat i feel like as a
one of your goals should be
when when the emergency or the crisis is something you can adapt your way out of, you do that.
Right?
Like as opposed to one thing has gone wrong, one hiccup in the supply chain has happened, and now we're starving.
Right?
I feel like we should all be able to weather pending food shortages.

SHTF Chef for the day.
I want to talk to you guys about, I guess we'll do another sound bite. I want to talk to you guys about knife skills.
Now that is a delicious cut of long pork.
It is good to be back behind the microphone, folks.
It feels good.
I don't know if it's the rainy day or whatever, but it feels good.
or whatever, but it feels good.
So something that we rigorously practice in the early days of culinary school are knife skills, and knife skills are essential.
They're not really something you can get around.
Most people don't take full advantage of them,
but there are things that are vital.
I think being able to understand the difference
between things like dicing and mincing,
you know, the French word for a very, very small dice,
which is really kind of a cool thing to be able to do,
is called brunoise.
The way we started is we would use potatoes,
and you can practice this way at home too.
And we would cut the potato, peel the potatoes, then cut the potatoes into rectangles.
You know, shave off each side, boom, boom, boom, flatten the ends.
And from that rectangle, we'd be able to cut batons.
And batons were just about, you know, a half-inch wide rectangle baton, you know, basically like a big fat French fry.
And then we would cut French fries.
We would also cut potatoes up in a quarter inch, and that's what were called French fries.
And then we would also cut potatoes up into an eighth inch which we referred to as the
the uh julienne and the julienne is essential i mean you have to be able to julienne things like
peppers and onions you know you you think you hear the word julienne and you think uh what kind of
fancy dish do you make with the julienne no like i need to be able to julienne peppers and onions
so that i can make a good chicken cheesesteak for my wife.
You know what I mean?
That's serious.
They're good.
And you want to do, like, such an overlooked meal, particularly in rainy weather and in the cold, if you have a broiler, is the French onion soup.
You know, French onion soup is such a powerhouse meal, right?
You're taking onions, which are so full of all kinds of nutrition,
and julienne of onion.
You know, we would do like a 50-pound bag of julienne onion.
You had no eyes left.
Your eyes look like my right eye does right now.
You cook those onions down until they're soft and starting to caramelize,
and then beef broth.
Beef broth, you can add some rosemary, you can add some thyme,
whatever kind of seasonings, cracked pepper, bay leaf, that kind of stuff.
And then the beauty of a French onion soup is how the French decided, like,
let's take a crouton and then some Gruyere cheese,
shred the Gruyere on top of the crouton, and broil the whole thing.
I mean, it's such a nice little treat.
I love a good French onion soup, man.
But anyway, that's the julienne.
And the mince can often be, anyway, that's the julienne. The mince can often
be like confused with the small dice, like a brunoise, right? Small, small dice, but still a
square. You're still going for that sort of cube. When you mince, you want a coarse sand texture,
you know, and things like that are important. You know, like a minced garlic, a minced ginger,
you don't want to chew on it in a dish.
You want it to just basically disappear into the sauce, that kind of thing.
A minced parsley can be really good also.
Minced herb mixes, fresh herbs, that kind of stuff.
The mincing is an important thing.
It's important to be able to mince, you know,
and know the difference. They, what else? Pairing and peeling with a pairing knife,
those are important skills too. Nothing can really cook properly if it's not all cut to
around the same size. You know what I mean? When we're talking about similar ingredients.
Like if you take a half a potato and cook it in boiling water
with a quarter-inch cube of potato,
what do you think is going to be done first, right?
So you've got to get it in the ballpark.
And it affects things.
What else?
The chiffonade.
The chiffonade is a really cool knife skill for this time of year.
If you are a member, you'll see the chiffonade in the plantain video I talked about at the beginning.
But it's essentially when you take large flat leaves, mint, basil, those kind of things,
and pile them on top of each other, herbs. And then you roll them into like a cigar.
And then once they're tightly rolled, you come in and slice them very finely.
And you get like a filament-thin sort of slice of herb.
And it's a beautiful thing.
It's the way you dress a caprese salad. It's all good. It's a beautiful thing. It's the way you dress a caprese salad.
It's all good.
It's a great thing.
But nice skills, PBN family.
They're important.
They're important.
They're as important as knowing how to control the heat.
You know what I mean?
To no collapse.
So, for words, I want to bring you something really weird.
We got a new book to read out of.
This is from the Book of Five Rings, Miyamoto Musashi.
When he got old, he handed off Miyamoto Musashi, 60 men plus.

devastating, two sword swordsmen. And he handed off these five scrolls when he got old and was starting to die. He retired, you know. The Ground book, the water book, the fire book, the wind book, and the book of the void. He handed those scrolls off to one of the younger
folks that he was living with in this mountain retreat. Well, he was dying with.
And in one section, he writes about rat's head and ox's neck. Rat's head, ox's neck means that when we are fighting with the enemy,
and both he and we have become occupied with small points in an entangled spirit,
we must always think of the way of strategy as being both a rat's head and an ox's neck.
Whenever we have become preoccupied with the small details,
we must suddenly change into a large spirit,
interchanging large with small.
This is one of the essences of strategy.
It's necessary that the warrior thinks in this spirit in everyday life.
He must not depart from the spirit
in large-scale strategy nor in single combat.
I think it's solid advice.
