At some point in your life, you were nice and happy and normal and then eventually you wind up
looking at the world as this thing, this biblical sort of end times thing.
And what I was able to do, I had the ability to sit down on the computer and go,

was like let's go spend 15 minutes making my heartbeat real fast and reading
about the doom and gloom of the world
the average person doesn't have that choice anymore.
If you do, but it'd be an abandonment of everything, you know, which could be the move that might very well be the move.
You know, I can get you there slowly, but surely and we're going to talk about part of that process today with my what's inside the cash but you just have
to recognize that's what it is you have to recognize that that's the boat that

feed has changed dramatically. You know, five, 10 years ago, the news feed was so, so pop
culture, right? And now it is misery, suffering, the highest order. And there is like this undertone of misery and
suffering and everything and hopelessness, folks. And I'm going to tell you the secret.
The secret is through the windows. Okay, it's through the door. There is something that's
happened. It's like I call it the spell of the home, the spell of the house, right?
The house you live in, the apartment, whatever it is, there's a spell that is cast upon you.
And it's probably not the house itself as much as it is like that.
You know what I mean?

But there's a spell cast upon you and it is what I call the spell of the house.
It's almost the opposite of a vampire, like once you give yourself permission to cross the threshold and leave the house,
get out in the backyard, go out for a walk, hike, whatever it is, leave the house, go do the thing, whatever the thing is out there not work. I'm not talking about one one structure to another structure
I'm talking about outside. Holy shit. Look at it. I'm talking about outside
You feel the life start to you know feedback into you the hope the whole thing

There's nothing out there.

You know what I mean? Be comfy around the house.

So this guy, Rad Mesh,
So this guy Rad Maje, I don't know, he just talks about like the condition of the average working male, single, old, not old, but you know, like the average single working male
who might not have found that person yet, not might not have fallen in love yet and is just well aware of the horrors of the machine.
And I don't know, I just think he's one of the most interesting guys to listen to because it's
completely unfettered and unfiltered and it's just him sometimes largely in his own misery,
sometimes sort of taking his misery and not really trying to fix shit,
not really trying to fix anything, just talking about it with people, like helping them understand
like these are the conditions we're in folks. And it's not like doomsday or anything, it's very
personal, it's very sort of the personal struggle of the modern age. But it's a unique take, you know?
And it's a little bit of a take that we all feel at all times.
But it's also like the hopelessness and the rotting and the decaying in front of a screen
sort of lifestyle that's out there that's occurring is really not that hard to defeat.
Do you know what I mean? It's fundamentally a substitute for boredom
Except it yields no creativity. It yields no creation
Right. Whereas when you were a kid and you were bored you would learn to play the guitar
You would learn to draw you would learn to do something and on the other side of that thing that you learned was
creation like oh wow

right? So why am I talking about all this? Because I have fundamental sympathy, I guess,

day, that's all it is. It's just I feel the sympathy. I feel sympathy and empathy for the people who haven't figured out that outside there's
a good dose of medicine.

There's just something out there waiting for you.
I'm very surprised and kind of impressed at the power of the comfy living situation of
the average American and how the comfort and convenience of our modern society just dips
your toes into hell and desperation and apathy and so on and so forth. If you don't believe me Schedule in July

Just schedule it. You don't even have to sleep out there. You know what I mean? Just schedule
24 hours outside in a place that's not your home or your front yard or backyard because that might get weird
Plus you'd be more you'd be too likely to escape to the air conditioning and the comforts.
But I can tell you right now, I mean, I've felt it many times.
After about four to six hours, six to eight hours, something along those lines, you're
going to feel a reset in your life if you're not in the phone that you won't even believe.
It's almost sort of like, it's like that when Jack Skellington wakes up in Christmas Town, you know what I mean?
This is someplace new.
Really, that's what it feels like.
I don't know, I don't even know how we got on that tirade,
except this is a reoccurring theme in my head all the time,
is the fact that the news has gone from, oh look, somebody's
bra fell off to the whole world's coming to an end and marinate on that for a minute.
You know what I mean? They never go like, every news story could fundamentally link
to PBS. Maybe I should reach out. My father's told me for years. You need to reach out to
NBC and Fox and these people you got to tell them about what you do and I always thought for a long time I've always be like man these people

You have these years where the basil just and for a cold year, it's weird.
Mine exploded not too long ago
I don't have a ton planted this year, but it really took off
and last night I
Created an herb mix
Nothing fancy, you know flat leaf parsley
Fresh oregano fresh basil just minced up together. Nothing too crazy, right?
And I did all kinds of baking I baked all kinds of great bread yesterday
I topped some focaccia with it. I folded it into some dough to make a baguette. I
Finished a tomato sauce with it and just it's that time. You know what? I mean, it's that time, but I talk about like
Medicine food and when you eat fresh herbs you just
know it you just know oregano in particular right you eat oregano and it
just feels like it's like eating a garlic clove you know what I mean it's
going down it's gonna do you well and it's also gonna be great but basil
chimichurri over a charred nation is well I used to work in a Cuban joint and
we would char up these hanger steaks and then we
would put a basil chimichurri over top of them and really good grilled meats grilled chickens even
grilled fish for this one um if it's if it's thick cut you know what i mean like a big cut of rockfish
striped bass whatever stuff like that you know what i mean? Like a big cut of rockfish, striped bass, whatever.
Stuff like that, you know what I mean? Maybe not great on salmon, but maybe. I don't know. I could see it actually. I've never tried it, but maybe. What the member was asking was, well what he asked
for was a pesto recipe. And I said, you know, I can't give you a pesto recipe in all honesty,
that's going to knock your socks off and you're gonna go like wow
That's way better than other pesto recipes, right? You're fundamentally dealing with like four ingredients or five
fresh basil
Pine nuts parmesan cheese garlic
olive oil, word up together and that's what you
got.
You know, that's the thing you got.
So for me, that's kind of what it was.
Now the chimichurri is different.
The chimichurri is the best way to describe a chimichurri so you know what you're going for is like an herb salad
thoroughly dressed, used as a sauce. Okay, that's really what it is. Like, if you had
if you tore up or sliced up a bunch of bunch of herbs and you thought of it as like a tiny little salad in a dish and then you thoroughly thoroughly thoroughly
you thoroughly mix that thing up and dress that thing right that's what your chimichurri is
so when you spoon this out if like if it were a dressing you'd spoon it out and there'd be
little flecks of herb right little flecks of basil what you want this to be is when you spoon it out and there'd be little flecks of herb right little flecks of basil
What you want this to be is when you spoon it out. It's laid in with herbs
but it's also you know, laden with other things like the uh, what's the
Olive oil and so forth, right?
So that that's kind of what this is all about
uh When I would make this basil chimichurri, I would chiffonade. It
was part of the job, so you had to do it. It wasn't my option. It wasn't my
brilliance. You would chiffonade the basil. And to chiffonade the
basil, you roll it up like a cigar and then slice thin, as thin as you can,
through the whole thing. Right? Good sharp sharp knife you can get it like filament thin and it dresses the meat really well that way same thing
with the parsley what so the red onion itself you want to pretty much dice it as
fine as you can dice it you know what I mean quarter cup of olive oil, the better the olive oil tastes, the better this whole
thing is going to be.
Four tablespoons red wine vinegar, that's an essential.
The red wine vinegar is kind of the thing in this whole recipe for me outside of the
basil, right?
But like what carries it is the tanginess of the red wine vinegar so
if if you're doing something rich if you're doing like like a ribeye like
you're doing like a top you're doing like a tomahawk ribeye type deal right
like bone-in ribeye thick cut lots of fat you may even want to do more vinegar
Because that's what makes this thing
Sing with your charred meat, right? You got like the char flavor you got the fattiness richness of the meat and
Then the tanginess of the red wine vinegar is what's like?
You know what I mean
Two cloves of garlic minced fine. Finely, finely, finely minced.
You don't want to chunk a garlic in your chimichurri.
Teaspoon of salt or half tea.
Whatever, salt and pepper.
Make it taste the way you want with the salt and pepper.
I don't know why I put the measurements in there.
And I'd say that pinch of red pepper flakes
optional if you want. If you want. sometimes I'm in the mood and it's like I want everything to be hot
You know you get you get that way usually the end of a day after a long day you get like

I might have to show you that I didn't know that's what you meant by flooded. I thought you meant like, you know
That's five alarm flooding right there, but anyway
So the chimichurri, everything
sliced up, prepared as mentioned here,
and then really mixed together.
Mixed together in a small bowl, dish, whatever it is.
It doesn't have to be emulsified or anything fancy
like that.
You don't need a stick blender.
It's literally just mixed together.
And then when you prepare or when you apply it right you're gonna you're gonna
lay all that herb and all that onion and all the goodies like right on top of the meat
and you're gonna get some oil and some vinegar naturally but like like man yeah that's the good
stuff okay that is the goods oh so that's the PBN room that said no oh maybe it came through late
I don't know that's it for me folks on shtf chef make yourself a chimichurri to that uh incredible
