Today we have Jesse and.
Chopé, who is also known as the glucose goddess on this podcast, she is a much-requested,
long-awaited guest.
We've wanted to speak to Jesse for a long time.
For those of you that are unfamiliar with Jesse, she is a French biochemist, founder
in New York Times, an international best-selling author.
She has devoted her career to translating cutting-edge science into easy tips to help people
improve their physical and mental health through her books, glucose revolution, and the
glucose goddess method, and has reshaped the global conversation around blood sugar.
Today we're going deep with Jesse talking all about the ground.
I'm breaking guide to glucose, science-back hacks for empowering nutrition at every stage of life,
and the importance of glucose and how it could be harming you.
We also talk about pregnancy, nutrition, and breaking stigmas around food and how to nourish our bodies.

and we had such a great time.

When you come from Paris to the United States for a month, what happens to your diet here?
I'm curious.
I spend a lot more money to eat healthy.
Do you see what I mean?
Like in France, it's cheap to eat healthy.
You just go to the grocery store and you buy vegetables every day for your dinner.
You buy fresh meat, fresh stuff.
And here it's a track.
Like I have to go to the whole food, et cetera, to get the nice produce.
And also, things are way more expensive here.
So I have to think about it more.
So you have to almost have a strategy on how you eat here.
Whereas Paris, it seems like it's just kind of second nature.
Yes, and the restaurants in France, most places have very healthy options.
You'll find really good salads, nice meat, nice fish, omelets.
It's just kind of, that's the baseline menu at any corner restaurant in Paris.
Here it's very different.
So I have to have a strategy so that I don't feel like crap because usually when I come here, it's to work.
So I have to make sure also, you know, my glucose is steady.
I feel good.
So it's a calculation.
I make sure that the place I'm staying is not too far from like, well, in LA, it's like Air One or Whole Foods.
Yeah.
Yeah.
In L.A., you have a lot of options, though, but it is expensive.
It's very expensive.
Yeah.
And you don't, the main difference is in France, you go to the butcher, the fish guy, the produce people, and you go there every day.
And you go there's every day, because there's one of these places, you know, next to every single home.
And you buy the food for dinner every day.
So you buy a little bit of food every day.
Here you do big batches of supermarket, grocery shopping, different things.
vibe. Oh, I love Paris vibes, though. Come hang out. I will. Don't worry, Michael. I would love a trip for
our arm. You have been doing this for a long time. We have been harassed by the audience to get you on
the show. So it's really cool to finally be doing this. Out of all of the years that you've done what you do,
what has been the craziest finding that blew your mind? In the glucose world, the craziest finding for me
was when I saw the studies that said that the order you eat your food in has an impact
on the blood sugar response of that meal. So if you eat your veggies, then proteins and fats,
then starches, you get a much smaller glucose spike than if you eat the carbs first.
God damn, and I'm doing it wrong. What are you eating first? Bread?
The carbs. I know you're not supposed to do that. Well, start with the veggies.
Okay. Okay. I actually, I'm doing protein first normally, but I just had a plate before I saw you and there
with sweet potatoes and I had up a couple bites of that first.
It's okay, I forgive you.
Okay, so you should do.
The vegetables, the protein, and then the carbs.
Exactly.
Because when you have the veggies first, that's the key, the veggies first.
I need to make like a T-shirt that says that.
The veggies contain fiber.
And so they create this sort of protective mesh in your intestine that slows down the arrival
of the carbs in your bloodstream afterwards.
So that was the biggest discovery for me.
It's like the order matters.
And now I'm in a sort of second chapter of research that has to do with pregnancy.
So I just had my baby boy six months ago.
Congratulations.
Thank you.
I know you guys have beautiful kids, so congrats to you as well.
I also learned in that domain of science that DNA is one thing,
but what you eat during pregnancy changes what kind of baby you give birth to, essentially.
Like your baby's body and brain is shaped by your pregnancy diet.
Same DNA, but two different diets will give birth to two different babies.
That was mind-blowing.
When you say two different babies, give us baby A and baby B.
and baby B. Okay. So baby A is a baby who had a lot of coline, which is a nutrient found in
eggs and meat and fish, lots of coline, which is very important for the brain. A baby who had
a lot of omega-3s, so that's something found in fish and that a lot of people supplement with.
So that means his brain developed with all of the nutrients that he wanted. So neurons grew as
much as they wanted. Number of brain cells grew as much as they wanted. And we can see a measurable
difference in things like reaction time, hand-eye coordination, IQ as a toddler.
Baby A also did not have too much sugar from his mom during pregnancy, which means his metabolism
was not vulnerable to getting diabetes later in life.
Baby B didn't have any coline, didn't have any omega-3s, had a mom who ate 50 cookies every
single day, and the mom didn't know that she should not be doing this.
And this baby will be more vulnerable to getting type to diabetes.
later in life and will have a brain who will have developed in a slightly more suboptimal situation.
So your diet during pregnancy sort of co-creates your baby's setup, body and brain setup.
And that's the topic of my new book.
It makes a lot of sense, though, when you think about it, right?
If you're giving it the nutritional building blocks to do certain things, the same things that
we as adults are eating for and supplementing for.
It would make sense that the baby would come out that way.
Absolutely.
And the nine months of pregnancy are very important, very critical moment.
And a lot of moms are told, oh, don't worry about it.
your baby will get what he needs from you or we're often compared to ovens.
You know, a bun in the oven is something you hear.
But we're not ovens, but we eat matters for our child.
It matters to his development.
And the baby will not always get everything that he needs.
He'll get what the mom gives him.
And this is very important information that I want to make sure people learn about.
How has that information been received when you share it?
I imagine this subject in particular is very touchy.
Obviously, people care very much about their children.
and birth and all those things, especially as parents.
Like, has it been received positively, negatively, controversially?
Well, the stuff I share in this book is not actually new.
These are a big World Health Organization guidelines,
American Association of Pediatrics guidelines.
Like, these are things that we've known for a long time.
But for some reason, they haven't been properly communicated to moms.
So what I'm trying to do is just bring all this info in these guidelines
and put light on them, shed light on them so that moms have access.
So the reactions, you know, range from empowerment, excitement to feeling like, oh my God, but I already had my kids.
Is it too late for me feeling guilty?
So it's a complicated thing to navigate because pregnancy comes with pressure.
Like you're building a human being, right?
And so it's complicated to know what to do with that pressure.
But in this book, I hope I give moms to be four simple tips to help navigate that pressure in a simpler way.
The word glucose to me is overwhelming.
Okay. Let's unpack it.
Yeah, I feel like I need to start with that and unpack it as a kindergartner.
I don't know if it's because I'm scared of blood.
You're scared of blood?
Yeah, or needles, but that word, like, I don't really know what it means when someone says to spike your glucose.
Okay, let's talk about it. It's great question. Explain that.
Okay, so glucose is your body's energy. So right now, as we're talking, all of our brains are using glucose to think.
Our hearts are using glucose to pump. If you move your hands, your hand muscles are using glucose to
move. So it's the energy your body uses to do everything. And how do you give your body this energy
by eating foods that contain it? So carbs basically contain glucose. And you have two categories.
Starches. So that's bread, pasta, rice, potatoes. Those contain glucose. And then sugars. So anything
sweet from an apple to a chocolate ice cream also contain glucose. So when you eat either starches
sugars, the glucose molecules go from the food to your stomach to your, I won't say it, bloodstream.
Yeah, your bloodstream. And that's where the glucose gets brought to all of your cells. So to give
you energy. So why is everyone wearing these glucose monitors? Like, what does that accomplish? Because
some glucose is good, but if you give your body too much glucose, problems start happening. It's like
if you have a plant, you know to give it some water, but too much water and the plant drowns, right?
Human body is the same. Some glucose is fantastic. Too much is not good. So I'm wearing mine also.
Oh my god, I'll faint. Sorry, sorry. If anyone talks to me with a glucose monitor, I might say, I'm not wearing one.
You think it's like this deep needle. No, no, no. It's just something about having a needle in your body. I'll faint. I don't know. I'm not wearing one. Don't worry. Okay. It was a lie. It was a total lie.
You know, so in an extreme example of too much glucose could be like diabetes, correct? Exactly. Right. So like if you go, that's like the extreme example. That's the extreme. Yes. And so why is too much glucose bad? Because when you have a lot of glucose,
in your body at once, inflammation increases.
And inflammation is not good.
Inflammation is one of the main killers of our lifetime.
So inflammation increases.
And also your body tries to get rid of this excess glucose.
So it puts it into your fat cells.
And that's one of the ways that we gain fat on our body.
If someone's struggling with weight management,
it's likely they have too much glucose consistently.
Or if they struggle with inflammation,
it's maybe there's too much glucose.
They're overdoing it.
And how do you spike the glucose?
Is that a bad diet?
too much sugar, alcohol. It's by eating too many carbs and sugars at once. So if you have a meal
that's bread, then spaghetti, then more bread, then chocolate, than a cookie, than ice cream,
that's 100% carbs. It's all glucose. So you're going to get a big glucose spike. A spike just means
like a rapid arrival of glucose in your bloodstream. And that spike carries the consequences
I just mentioned, the inflammation, the weight gain, etc. So why do we want to prevent the spiking?
Because we want to prevent the negative consequences in our body. And also, lots of glucose,
makes us age faster. So with every glucose spike, you're aging faster. So I manage and I look at my
glucose levels because even though I know a lot about what I need to do to keep it steady, things happen.
Like I'm in Austin today, so I'm going to eat something at the airport. I want to have a look at
what's going on in my body so I can learn and so I can adapt. So for example, if I ate something that
would spike me, I'd be like, oh, I might just go for a walk before I come and do this podcast to get
my glucose levels back down. And I like getting the real-time insight.
Do you always have it on?
Pretty much.
I would say no, like maybe 70% of the time.
So the monitor basically informs you instantly.
Exactly.
When you make choices with food or behave, whatever.
On my phone, I get 24-7 my levels of glucose in my body.
So what are some of the more, I guess, if I'm kind of curious about this for myself.
You should try it for two weeks.
It's very interesting.
If he does the glucose monitor, that's divorce.
No, I'm doing it.
Go sleep somewhere else.
I'm interested.
I can't do it.
I'm too nervous.
If I said right now...
Doesn't it hurt?
No, not at all.
If I said...
So by the way, it's not a needle.
It's not it.
Yeah, it's like a little Velcro patch almost kind of.
Pretty much, yeah.
Yeah.
So if I said, Jessie...
It reminds me of the castor oil thing that you put on your belly button every night.
But if I would to give you like and say, okay, eat this small bag of gummy bears right now, that would spike your glue close, right?
Probably, yeah.
I mean, depending how small or big it is.
Like a normal size, like airport bag.
It would spike.
So I would say, Michael, have some almonds at the same time.
so that you balance the blood sugar spike.
Because we just talked about the spike.
But what comes after the spike?
The crash.
And the crash, the bigger the spike, the bigger the crash.
And crash leads to cravings, fatigue, and hunger.
So you want to avoid the spikes
because you want to reduce inflammation and aging.
And you want to avoid the crashes
because you don't want to feel tired.
So when somebody is spiking
and all of a sudden you get that craving for junk food,
that is likely you're experiencing in your body a glucose crash.
Very likely, yeah.
If you're going to have a glass of wine and you're in Paris, what are you having to balance that out?
Protein before.
Okay.
Yeah, never on an empty stomach.
Protein or some nuts, little olives that they usually give you when you have a glass of wine.
So alcohol in an empty stomach is going to be worse for your body than alcohol after food.
But here's the cool thing.
Wine does not spike your glucose levels.
Really?
Yeah.
Yeah, yeah.
So alcohol does not.
What does spike your glucose levels is sugar that's added to a cocktail.
So for example, a morhito, cosmopolitan, etc. that have sugar in them, that'll spike you.
So if you just have a glass of wine, it doesn't spike it?
No, but it doesn't mean the glass of wine is good for you.
Glucose is not everything.
You can eat something that doesn't spike you.
That's still not very good for you.
Because glucose is just one aspect of health.
What are some of the, in your findings, what are some of the things that spike our glucose in a negative way the most?
What are in our diet?
Any fruit-based, fruit-based healthy thing, like fruit-based, smooth.
100% fruit smoothie or granola with healthy honey or healthy coconut sugar.
All of these things that are actually really sweet, they're just sugar.
It's not because something comes from fruits or something is with unrefined coconut sugar that is better for you.
It's still sugar.
It'll spike you.
Are there times, and this may sound like a strange question, that you do want to spike your glucose,
like maybe for a workout or something or no?
So workouts can spike your glucose.
So there's something you have to know is that you eat glucose,
but your body can also make some from the inside if you need more for your muscles.
So when you exercise intensely, sometimes your liver will be like, uh-oh, we need more glucose for our muscles and we'll just release a bunch of glucose into your bloodstream.
You'll see a spike, but it doesn't come from food.
It comes from the exercise.
In this case, the spike is not actually harmful.
You want that spike for the muscles?
Not necessarily.
Like if you fuel properly before a workout, you're probably not going to get the spike from your liver.
How would you fuel before a workout knowing everything you know about glucose?
I would do a combo of protein and some whole full.
fruit. So glucose is helpful for your muscles to be able to do what they need to do. So if you
have some glucose in your system, you'll be able to do more explosive work. So, you know, I lift weights.
And for weightlifting, it's nice to have some of that explosive thing. I'm not going to go for a two
hour long, slow bike ride. I like to do kind of hit intensity stuff. So I would do peanut butter and
banana. Classic. Super good. Very nice. There's carbs in there, but also the peanut butter is going to
slow down the sugar from the banana.
So you get a nice, steady curve, and your body will be filled with the sugar.
Sandy, our trainer, said that we should eat something very similar to that.
She said two eggs or three.
I do four eggs before.
Okay, but sometimes, like, eating eggs in the morning right away is like, ugh.
But she said two eggs, if you can only stomach two and half of a banana.
Yeah, sounds great.
She said she likes that for us before we lift.
That's really interesting.
I didn't know that it had to do with glucose.
You said you weight lift.
Have you done any studies?
I'm not like a professional way lifter.
Okay, but but you'd say it's a modality that you like.
Yeah, absolutely.
And have you done any studies on showing what a lot of cardio does to glucose levels?
What do you mean?
Like, do they reduce glucose levels?
Does it reduce or does it?
Yeah.
Or does it rock?
So a very effective thing.
Like if you see a spike in your body, an effective thing would be to just go for a long walk or do a little of cardio,
because that's going to use up the sugar in your bloodstream, the glucose in your bloodstream.
You seem like you like a long walk for me.
for managing. I've heard you say that. I'm French. No, we like walking. I can't walk anywhere
here. You got to take cars all the time. What's up with that? Where are you most of the time?
In LA. Yeah. Yeah. Ellie's not really a walking place. No. Go to Sun Life. Okay. And go walk around
the lake. LA's really like a place. Like you kind of like are in the area and you have to drive there.
New York's better for walking. Yes. Right. Love New York. Yeah. So when you think of your perfect
glucose dinner, it's really amazing. Okay. And, and
What if the audience is listening?
What would you tell them to make?
So my brain goes to pasta because I love pasta.
So if I were to make a dinner that contains pasta,
but it's good for my glucose levels,
I would make a veggie starter.
So I'd make like some nice roasted broccoli with like tahini,
a bit of chili, something like that as a starter to get the fiber to protect me from the spike.
Then I'd do a protein.
So I don't know, like a nice piece of turkey or beef or anything.
And then I'll make a nice big plate of spaghetti.
and with a ton of parmesan and olive oil and sea salt.
Sounds good, no.
And then for dessert, I mean, fruit is always a very good option
if you want something sweet but not too spiking of your glucose.
You can eat anything you want and still keep your glucose levels steady and managed
if you learn these little tips.
So we talked about the veggies first.
We talked about pairing a piece of fruit or sugar with like some almonds or some nut butter.
Other stuff you can do.
Vinegar.
Vinegar is very interesting.
So you have a little glass of water there.
Michael, if you put a tablespoon of vinegar,
in there and drink it before you eat carbs, you're going to lower that glucose spike of those carbs
by up to 40%. Because vinegar contains this magical molecule that slows down how quickly carbs
turn to glucose in your digestive system. Can you eat them with like cucumber? Yeah. I love
vinegar and cucumbers. Like pickled cucumbers? Yeah. That's so good. So how do you tell moms to serve
their kids? Is it the same formula? Yeah. So you do vegetables, protein, carbs?
A really good tip is while you're making dinner, if your kids are a bit hungry, just serve some pieces of like raw carrots or celery or cucumbers, put them on the table.
They can just kind of nibble on them before dinner.
So they get a veggie starter in there before you even sit down.
And there's a big thing for kids, which is we have to get rid of the idea that fruit juice is healthy.
So whole fruit is fine.
Fruit juice is just sugar.
So there's a lot of marketing in there we have to unpack.
But yes, same things apply.
I wouldn't do vinegar for kids because it's just a bit too intense.
probably for the little teeth. But yeah, it's the same concept. So a protein rich, savory breakfast
is always the way to go, whether you're an adult or a kid that's super important for your glucose
levels. Veggies first, move after eating, put clothing on your carbs. If your kid, if it's 4 p.m.
and your kid is like, I really want this donut or this whatever, say, okay, but first have some almonds.
You want to package always the sugar with a source of protein, fat, or fiber to help lower the spike.

It's so there's the manipulations are crazy.
This morning.
The problem is he's pretty clever and I don't want to discourage the negotiation because part of me like, I'm like, I respect it and I want him to like to.

We were saying winning or something about a game we were playing and I won the game.

He like, I'm like, okay, fine, we'll tie.
This morning he said, fine, we tied?
I was like, because it was kind of like it was, it was like a dumb game or something.
But I didn't want to discourage him, but like, no, you lose, you know, because I, because I respected that I see what he's doing.
I'm like, okay, I want to develop his confidence muscle, you know?
This morning he came up to me and said, Mom, I just really want to snuggle with you.
And I thought, oh my God, of course you're so cute.
And then he said, okay, let's go snuggle.
Could you grab a cinnamon roll and let's watch it into turtles?
That's amazing.
That is a habit stack.
He got the food that he wanted in with the Ninja Turtles,
but he was using the snuggle as to enter the door.
I have another question for you.
How did you originally get so into the topic of glucose?
Because obviously you've built an entire business and brand around glucose.
I would be curious.
Honestly, it came to me.
I didn't look for it.
So I would say the origin story is I was 19 years old,
went to Hawaii for vacation, jumped off a waterfall, broke my back.
Oh, Jesus.
So one of my vertebrates snapped into 13 pieces.
Sorry, it's gruesome, especially for you, Lord, and for all the blood stuff.
Oh, no, I can handle that.
Oh, you can't handle a glucose monitor.
Cool, cool, cool.
So it broke into 13 pieces, and now I have all these metal rods in my bag.
Yeah.
So I had surgery.
By the way, back pain is the worst.
Yes, but I don't have any back pain.
Okay, well, at the time, though.
Let's stop projecting your back pain.
I have a back pain.
You're like, back pain is the worst.
Yeah, so physical, you know, injury, et cetera.
but then I started developing these crazy mental health symptoms.
So depersonization, which is a feeling of being a stranger in your own body, I would look into mirrors and have panic attacks.
I'd be like, who's that?
Like it was fucking freaky.
I was not okay.
And I was 19 and I was completely broken.
And at that point, I felt, okay, if I don't fix my health, like, I don't know how I'm going to go on.
And so I was studying mathematics and I kind of shifted.
I was like, okay, I have to understand how this body functions.
So I went to school for biochemistry, my graduate studies, I worked in genetics for a long time, et cetera, but nothing helped me.
The only thing that helped me almost 10 years after my accident is putting on a freaking glucose monitor.
And it showed me that big glucose spikes could trigger these episodes of depersonalization.
Yeah, that's the face I made, Lauren.
So wait, how long does depersonalization last?
Is it all day long or is it come and go?
It was like constant for six months a year, and then it started just being these waves,
and I would be super scared of being alone ever because I didn't know when they would come up and start.
And one morning, I had a donut for breakfast, and I was wearing a glucose monitor as part of this pilot study I was in with my work in Silicon Valley, just kind of randomly.
And big glucose spike from the donut, and boom, I feel an episode coming on.
And so I went, whoa, this is the first time I have a clue about six.
something that might be connected to my mental health. Nobody that I talked to, no doctor,
nothing, ever said, look at your diet, ever, ever. And so I was like, thank God, like, thank you
universe for showing me this. And so this came from a desire to fix myself. So I looked through all
the studies. I was like, glucose in mental health, glucose in somebody without diabetes. And I read
everything I could. I found these hacks. I discovered them. I applied them. I started feeling better.
And then I could rebuild, you know, after the sort of baseline nutritional stuff, then I did a lot of EMDR, somatic therapy, and now I'm fine.
But it was through my own pain.
And then I was like, people need to know this stuff because it's not just for mental health.
Whether you have fertility issues, type to diabetes, cravings, fatigue, eczema, acne, etc.
These glucose hacks are super important for everybody.
What kind of somatic healing did you do?
So crinocycral therapy was great.
And then I just learned that when I'm having an episode, an important thing is to go in.
into my body because I was kind of stuck in fight or flight after the accident.
I was really scared that I was going to die from the surgery and so my body was locked up
from distress.
So I started learning.
I needed to dance.
I need to move.
If I'm not feeling well, get on the ground, like do yoga, move, make sounds, like let my
body release the stress that was inside of it.
So I kind of made up my own stuff.
Michael and I have recently gotten very endocrinial sacral therapy.
Yeah.
And she's deeper in it than me, but I'm starting to do.
I cannot believe.
It is like I have done nine years of talk therapy in seven months.
I honestly can't believe it.
I almost can't even explain it to you because it's so gnarly and you can't explain it to anyone really until they do it.
Did you have that experience with it?
It was one of the first somatic things I did.
And the first session, the practitioner puts her hands behind my head and I'm laying down.
And all of a sudden, my whole body starts feeling.
the pain that I felt years before when I woke up from my surgery.
My whole sciatics were in, like, everything was burning.
My back was burning.
My legs were burning.
I started shaking.
I was like, what the heck is happening?
Yes.
Yes, yes, yes.
Did you cry or throw up?
Oh, yeah.
I cry all the time.
But it was more, the crying was just a stress release, but I saw that my body was holding
onto all this stuff.
And I was so shocked that this practice, this session sort of summoned it back.
It's wild.
Like, how, what happened in your experience?
Can you share her?
I've just been unwinding.
Have you heard of this?
Like moving and you're...
Like, I move all these different ways and it's like your fascia's unwinding.
Did you get sick one night too?
I got a hex.
Herks.
I know what that is.
Hex, Carson.
I don't know what it's called.
It's a physical reaction.
Like, kind of like you get to ayahuasca.
Whoa.
And it felt like there was all this.
I want, I hate to say trauma, but that's what it felt like in my fascia.
Yeah.
It was wild.
And I was drawn to it because we got it for our baby.
And I was like, oh, I'll do a session.
And then I did it.
And I was like, holy shit.
You know what she said too?
And I don't know if you've experienced this.
It can take 10 years to get into unwinding.
Oh, great.
That'll be me.
Your third eye.
But when you did cranial sacral,
did you find that it helped with pain in your back?
Or did you not have any pain anymore?
It was never about the pain in the back.
It was always about the brain.
It was always about the intense feel.
year of being alive that I had developed.
Did it help with depersonalization?
It helped a little bit, yeah, over time.
It helped.
I would feel better after the sessions.
I would come back.
It was a long, long process.
But it's one of the modalities that helped me, yes.
When you started getting better through learning more about glucose, was the shift really
just eating the donut in a different way?
It was not eating the donut for breakfast.
It was eating protein in the morning.
And if I did really want the donut, it would be after a meal for dessert, you know, at the
end.
So it's not like you're telling.
people, what I think so cool about you is you're not telling people to deprive yourself or not
eat the donut. You're just saying have a strategy around the donut. It's like how do you eat the
donut in the way that doesn't create a vicious cycle of addiction? We all want to eat the donuts. But if
you have it for breakfast, all day, you're going to want a chai latte with a bunch of sugar
and a cookie and more chocolate because you're going to be in this glucose roller coaster. So
buy the donut, have it after lunch for dessert so that it doesn't start controlling you. Like,
I want to control my donuts.
I don't want the donuts controlling me and how I feel and the amounts of sugar cravings I'm having.
Do you follow me?
Yeah.
And even in this country in particular, maybe not so much internationally, but maybe happening more now.
A lot of people start their day with like these super sugary coffee drinks or energy drinks with a ton of sugar and artificial sweeteners.
And so I imagine the majority of those people are the first thing in the morning.
Start the day with the glucose spike.
Yes.
And I think one of the main contributions of my work has been for people to understand.
stand that glucose matters for everybody, not just for people with diabetes, because it affects
you in so many ways. For me, it was mental health. Maybe for you guys, it would be, I don't know,
something completely random. Maybe your toenail would stop hurting. I don't know. But blood sugar
balance is the key of good physical and mental health. And so you don't know what it's going to
unlock for you. If you think you could feel better than you currently do, then you need to try to
manage your glucose levels and see what happens. Does honey spike your glucose? Yes. Yes, it does.
Even raw.
Honey is sugar.
Okay.
Yes.
Honey is sugar.
So honey is great.
If you love it, have it for enjoyment.
Don't think it's like a health food.
Have it after a meal, for example.
Don't start your day with a tea and five teaspoons of honey in it.
That's going to be a big glucose spike waiting to happen.
I do honey sometimes in my coffee, but I'm going to, but I was the other day she was
asking why, because I remember I wasn't doing it like when I said, uh, intuitively.
I just feel like it was too much honey.
Yeah, potentially.
If you're going to eat honey though, can you have two eggs before the honey?
Absolutely.
Okay.
That's my girl.
Have they done any studies with spiked glucose levels as it correlates to mental health or mental disorders?
Yes.
So diets that cause more glucose spikes lead to people having, well, lead to, are associated with people having more symptoms of depression and anxiety.
So when you put people with depression and anxiety on a low glycemic diet, that means a low glucose spike diet, they report fewer symptoms.
I'm not saying it's causing things.
Like, I don't know what was going on in my brain.
Maybe it was the inflammation from the spike that was triggering the episode.
You know, who knows, but there is a correlation.
We know that diet and mental health are linked, and we know that more glucose spikes associated
with more symptoms.
Do you have MTFHR?
I don't think so.
I wonder, because I know there's a lot of people listening that have that, and I wonder
if it's harder for them to process glucose.
I think it has to do with folate, right?
Like folate processing, folate metabolism?
I don't know if it impacts glucose.
You have to DM me if it does.
If you find that out, I would love to know what your thoughts are on that.
I have a particular question.
Every weekend my kids want me to make mommy waffles.
And I want to know if there's a better way to do it.
It's eggs, bananas, and oats.
And you blend it up and it's a waffle.
Great.
Is that okay because there's eggs in it?
Or is that defeating what you're saying?
So everything is okay.
It's okay to make waffles for your kids that have a little bit of sugar in them, right?
It's not about doing it, never.
So you said eggs, oats, and banana?
Yep.
I mean, that's a pretty good and healthy waffle.
So, you're a maple syrup.
I think my question is, like, is it okay if the eggs are paired with the carbs?
Do you know what I'm saying?
Yes, it's a good thing.
It's a good thing versus having them before?
Versus having the eggs and then having waffles.
She's asking because of the syrup and that, but if you're having the things before,
I think you're asking mixing versus one after the other.
Okay, so one after the other is better.
However, mixing is better than no eggs at all in the waffles.

So we can deal with you, do mommy waffles.

And also, by the way, nothing is good or bad in a vacuum.
It's always like compared to what.

And also, you know, there is value in just intuitively, like, feeling how your body feels.
But it's cool to have data because you can get real-time insights into what's going on.
Is fruit bad for glucose?
No.
Okay.
So that's a lie.
Whole fruit is fine.
Okay.
Even though whole fruit is not natural.
So, okay, I mean unpack this.
So you know when people are like, oh, fruit is natural, comes from nature, blah, blah, blah, is not true.
All of the, do you guys have pets?
Yeah.
Dogs?
Yeah.
Okay. So you know how all dogs that exist today are human creation? They all descend from wolves. And humans have been breeding dogs to make like a chihuahua, golden retriever. These are not real dogs. They've been bred into these species. I did not know that. Okay, there you go. So all dogs have been, quote, unquote, engineered by humans. Okay. Fruit is the same. All the fruit in the supermarket today has been bred for a sense. It's a
centuries by humans to make them super sweet and juicy and low in fiber and high in sugar.
What if you grow your own?
Still, because the seeds that you buy, they're modern seeds that have been engineered and bred.
If you go to like the Amazon, like untouched rainforest, you'll find bananas that are not
like the bananas you find at Whole Foods.
They're small and they're dense and they have low amounts of sugar in them.
Okay, so all this to say that the fruit you buy today is not natural.
It's high in sugar on purpose.
That being said, fruit also contains fiber.
And as I explained, fiber helps slow down the spike.
The problem arises when you change that piece of fruit into like a smoothie or a juice.
Because then you're getting rid of all the fiber or pulverizing the fiber and then just a bunch of sugar arrives into your bloodstream.
So yes, whole fruit is always fine.
Fruit juice, fruit smoothies, be careful.
They're for enjoyment, not for health.
Got it.
So all these people that are doing these crazy smoothies at all these establishments are spiking their glucose.
Or juice cleanses?
Oh, juice cleanses. I mean, if you do like a vegetable juice, it's fine because vegetables don't contain sugar. For smoothies, it's fine to have some whole fruit in your smoothie. Just don't make a smoothie that's 100% fruit. Make sure there's protein and fat in there to lower the spike.
Why don't you create a smoothie that's glucose appropriate with air one? That's my pitch. Yeah. That would be a great. Like we don't need to worry about the glucose spike. The glucose goddess smoothie.

Unsweetened almond milk.

No, you can put real milk. I love real milk. It just feels like this smoothie is like an almond kind of vibe.

What do you do when someone comes to you and they're a vegan?
Depends on their stage in life.
If they're pregnant, I'm like, girl, you got to get supplements.

because with a vegan diet you will not get everything
your baby needs. If they're not pregnant,
I'll say make sure that
you are not confusing vegan with healthy.
There are lots of unhealthy
vegan foods and make sure you're getting your protein.
Make sure you're supplementing with omega-3s also.
What do you mean make sure you're not
confusing vegan with healthy?
Because people think that just because it says vegan on it
that means it's a healthy product.
Exactly.
So you see like a vegan smoothie and you're like,
oh, that's healthy, but you don't realize
it has two cups.
of honey and maple syrup and lots of things can be vegan and really bad for you.
What is healthy when it comes to being vegan?
Well, I guess whole fruit, whole vegetables, a ton of lentils, a ton of pulses,
avocados, olive oil, nuts and seeds, coconuts.
And do you eat everything?
Yeah.
So what are the main food groups that you're focused on?
I am focused on protein.
So I eat a lot of eggs.
I love meat, fish, chicken.
I eat a lot of fats.
I'm French, so I love cheese.
I love cheese, too.
I love parmesan.
Parmesan is like my addiction.
Oh, I love parmesan.
So I put parmesan on everything.
I eat lots of veggies, and then I eat lots of good stuff.
Like, I love bread, I love pasta, I love desserts,
but I just eat them in the right way to not trigger a depersonization episode.
Outside of people learning to eat in the right order, which we've covered,
if you could wave a wand, what are some things you just would completely eliminate from people's diets
in the way that they're eating.
Probably like sweet breakfast foods,
which I think are really harming us.
100 years ago, people didn't have dessert for breakfast.
And now most kids are being brought up on sweet breakfast cereal.
So I'd replace all of those with an omelette.

I think it's interesting when you see your kids, and I've talked about this on the show, but they come home after a birthday party and they're maniacs in a completely different.
personality because they've had the birthday cake and the pizza and I don't want to deprive them of that

with feta and tomatoes. I'm a much nicer person. We are affected by what we eat. Our brain is affected
by the levels of glucose in our blood. It's crazy. So if someone's listening and they're pregnant,
what are some pillars that you swear by that they can find in your book? The first one is
coline. So coline is found. Yeah, you keep saying that. Yeah, coline is really, it's amazing. Colleen
is a nutrient that's found in eggs, in liver, in meat, and fish, and it builds your baby's
brain. So by the time your baby's born, most of his neurons will be in place. Most of his brain
cells that process information will be in place. Bond is made from liver. Perfect.
Healthy baby. I didn't know what's interesting. There's, there's a lot of studies now coming
out saying like a higher cholesterol actually could be good for longevity and for the longest time.
I mean, you're similar. We went through the era of people saying like too many eggs, don't eat
your eggs. It's bad for you. And now you're trying to say like you need that chlorine and you need that
protein and it's one of the, you know, higher cholesterol could be really good for you.
Absolutely. And look, there's studies also on pregnant women. So when you supplement pregnant
moms with coline during pregnancy and then you look at how their kids fare, in the first year of
life, these kids have faster reaction times to this very important test that is essentially a measure
of adult intelligence. So when a mom has eaten enough colline during pregnancy, there's a measurable
impact on her baby's brain development years and months later. This is a
very key one. Second key one, protein. When you're pregnant, you're building another person's body
and you need a lot of protein for that. Your needs go up. So you've got to get at least 1.5 grams of
protein per kilo of body weight per day in the second and third trimester. Very, very important.
And studies show that if your baby doesn't have enough protein in the room, he will adapt.
He will adapt to what he believes he will be born into, meaning a low protein world. So these babies
in animal studies come out smaller with less muscle mass and this setting stays with the
for life.
Wow.
That's the second one.
Third one, omega-3s, DHA, super important.
Build your baby's brain.
There's a study that shows that when you supplement moms with omega-3s
and you measure their kids IQ at four years old,
they have four points more IQ if they had enough omega-3, DHA in the womb.
And the last pillar is learning about sugar during pregnancy.
The amount of sugar that you eat will be directly reflected into your baby's bloodstream.
So your glucose levels become your baby's bloodstream.
glucose levels. There's no filter in place. If you spike, your baby spikes. There's lots of things
that you can do to lower those glucose spikes during pregnancy while still eating the cookie and the
ice cream that we inevitably crave sometimes. So these are the four pillars. And this is what I did
during my pregnancy. And these are the four things that are scientifically proven to have a beneficial
long-term impact on your child. So it's not a good idea to be pregnant. Well, this is the time I'm
pregnant. Like, it's a free for all and just get all the things that I've got to be careful as the man on
the show asking this, but you get what I'm going on. Like it could be, it potentially could have
long-term effects if you're not. There's a bunch of harmful myths around pregnancy. One is that you're
just a, it's just a bun in the oven. You're just an oven. You're passive. It's just about heat and time.
It's just growing regardless of what you do. It's just growing, like, chill out. Don't stress. That's a big
myth. Second myth, your baby will get what he needs from you. It's not true. The studies prove this.
You need to get the right stuff so your baby gets the right stuff. And the other myth is,
you should eat for two. Here, have more pancakes because you're building another body. This is actually
a time where you have to be the most conscious about your diet. But moms are being lied to
to where this information is just not coming to them. So yeah, it's not a good time to just say,
okay, f it'll just eat, whatever. It's actually a time where you eat will have a long-term
impact on your baby. And hopefully this book, nine months that count forever is going to help
people navigate that with very clear pillars, with not too much stress and easy tips.

What is the biggest misconception about your content online?
Where do you see the most pushback?
Hmm, the biggest misconception about my content.
I think people who just come across maybe a post or even just my name,
they think I'm all about no sugar.
Maybe they think I'm all about restriction and sugar is bad, blah, blah, blah.
So they think I'm more extreme than I am.
Another misconception is that I have diabetes, but whatever, that's just a personal misconception.
I don't think you're extreme at all.
Yeah, I know.
When you get the context of what you're doing, it's actually thoughtful.
It's very much like data-based.
Yes, and it's also not about restriction or saying you can't eat good stuff anymore that you enjoy.
It's just easy tips that help people live a slightly easier life.
What is your opinion on GLP-1s with everything you know?
about insulin and glucose? It's very powerful. It does help a lot of people lose the weight
that they have never been able to lose. I think my biggest thought about it is that it's
kind of like if the water that came out of the tap was toxic and our solution to this was not
to clean the water but was to give people a drug that makes them less thirsty.
Woof! That is literally what's going on with food. So it's a
quote-unquote solution to the problem but it's not solving anything so when all
these people get off you're saying that the problem is not solved the food problem
is not solved right they're not magically transported into a land where the
food is healthy and not killing you the the main issue is that if you're on a
gelp1 you have to make sure to eat enough protein as you guys probably know
it's all about keeping that muscle mass otherwise you're just going to lose your
muscle and then when you stop the gLP1 drug then you're gonna gain weight back
and it's just fat that you're gaining back so you
you can be in a worse situation than you were in the first place.
But I think people are aware of that now.
They know that protein is important when they're on a gLP one.
It's remarkable.
And it's incredible.
It really works.
You know,
it really cuts people's appetite.
I've seen it firsthand.
It's like,
it's insane.
I know we've covered diabetes and inflammation.
Does glucose have any effect on allergies or skin conditions or asthma or anything that nature?
Or is there no correlation?
In pregnancy, yes.
So there's a correlation between the amount of blood.
sugar levels and inflammation in the room and your kids risk for allergies, asthma, allergic
asthma and eczema as a toddler and as a child. So something about high inflammation in the
womb seems to be making a child's immune system overactive and so potentially developing these
conditions. In terms of in adults, I don't know. I'll have to look at the studies and tell you.
Okay. And then we're on the GLP once every we're actually switching gears a little bit.
for weight management, are people able to use these monitoring levels to kind of work towards
managing their weight in a more effective way?
Yes, because here's the thing.
When you steady your glucose levels, two main things happen.
One, fewer cravings.
So it's easier to not reach for a candy bar.
Two, I told you earlier on that when we have a glucose spike, our body grabs the glucose
and puts it into fat cells as a way to store the excess damaging glucose.
And so when you have high glucose levels, your body is in fat, fat,
storage mode. Your body cannot burn fat. So in order to start burning fat, you need to keep those
glucose levels under control. So naturally, if you look at your glucose spikes and you start to
manage them, it becomes much easier to lose fat on your body if that's your goal. And it's usually
a side effect of glucose management. Just because you're aware of that you're in a fat storing
mode. Not really. It's just because your body naturally does it, right? So if you come to glucose
management because you want more energy, if you're cravings, you want to manage diabetes, you want to manage
your hormones, well then kind of often what happens is that as a consequence, you're also going
to lose fat on your body. You're going to lose weight because your glucose level are steadier.
But it's not a diet. Like, you know, for me, stello and glucose hacks are not about dieting
and losing weight really fast. They're about helping your body get back into a really healthy,
balanced place, and then naturally you lose weight.

take a little more EMF, but if you can manage your glucose and get rid of inflammation and
calm out diabetes and weight management, like it's probably better. Can I just start eating my
vegetables and my protein before my. Yes. Well, that would be a good. And I would be a good. And I'm

opposite ways, yes, of course, but also very like contrasted way of seeing glucose.
